LENTIL-VEGGIE SOUP (CROCK POT)

Lentil-Veggie Soup (Crock Pot) image

This soup is easy to put together with basic food items that most of us have around. I found the recipe in Better Homes and Gardens Biggest Book of Slow Cooker Recipes, and I did some adjustments with the vegetables and herbs used. I was surprised at how good this very simple soup turned out.

COUNTRY HAMBURGER LENTIL SOUP - CROCK-POT

Country Hamburger Lentil Soup - Crock-Pot image

I created this on a busy hockey weekend - I wanted something warm to come home to after spending a long day at the hockey rink. This was just the ticket... and I got to clean out my cupboards too!

Provided by Brooke the Cook in

Categories     Clear Soup

Time 12h15m

Yield 6 serving(s)

Number Of Ingredients 13

1 cup dried lentils (I used a mix of red, brown, green and yellow)
1 (28 ounce) can diced tomatoes
8 ounces lean ground beef, browned
3 ounces celery, thinly sliced (3 stalks)
3 ounces baby carrots, thinly slieced (good-sized handful)
1/2 small onion, diced
2 garlic cloves, minced
3 cups water
3 teaspoons beef bouillon
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 -2 bay leaf

Steps:

  • Brown ground beef.
  • Combine all ingredients in 4-5qt crock pot.
  • Cook on low at least 12 hours or high for 6 hours. I do a combination of high/low, when I made this I did low for 5 hours and high for 4 hours.
  • Remove bay leaves before serving.
  • *Note: when I saved the leftovers, I added another cup of water to prevent it from becoming too thick the next day. It made very yummy leftovers!

CROCK POT LENTIL VEGETABLE BARLEY SOUP RECIPE - (4.2/5)

Crock Pot Lentil Vegetable Barley Soup Recipe - (4.2/5) image

Provided by DreiFromBK

Number Of Ingredients 13

1/2 large onion or one small onion, diced
1 green bell pepper, diced
2 medium summer squash (or zucchini), halved lengthwise and sliced thinly
1 C carrots, thinly sliced
1/2 C red lentils
1/2 C yellow split peas
1/2 C barley
1 can diced tomatoes
3 C vegetable broth (or chicken or beef), plus ~2 C extra water
1/2 t salt
1/2 t sugar
1/4 t black pepper
fresh or dried basil to top (optional)

Steps:

  • As with all crock pot recipes, this is a breeze to put together. Dice and layer all the veggies, and top with the grains, liquids and the spices (except the basil). The order I used was: onions and bell peppers, squash and carrots, lentils, peas, and barley, diced tomatoes and broth, salt, pepper, sugar, and finally the extra water. Set the crock pot on low for eight hours or on high for four hours. The lentils, peas, and barley will absorb a lot of water, so you may need to add even more extra (unless you like a nice thick soup like I do-then you will be very pleased when you arrive home from class!). Top with a sprinkle of basil and some pepper and enjoy!

CROCK POT CURRIED LENTIL SOUP

Crock Pot Curried Lentil Soup image

Serve this with crusty rolls for a satisfying winter or fall meal, or use it as a side dish with sandwiches. I am not a big lentil OR soup fan, yet I really enjoyed this soup.

Provided by Jennifer Michele

Categories     One Dish Meal

Time 6h15m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 tablespoons oil (preferably olive, or for authenticity -- clarified butter)
1/2 onion, chopped
1 1/2 teaspoons good curry powder (I like using more, but it is all to taste)
6 cups good vegetable stock (water or chicken stock can be substituted)
1 cup lentils
1 (14 ounce) can chopped tomatoes (with liquid)
salt

Steps:

  • Heat oil in skillet over medium high heat.
  • Add onion and cook until translucent.
  • Add curry, stir and cook for 1-2 minutes.
  • (you should be able to smell the curry flavors when it is ready) Add some of the stock to the pan to deglaze.
  • Pour the contents of the pan, and the rest of the stock into a crock pot.
  • Add the lentils to the pot.
  • Cover and cook on low for 6 hours.
  • Before serving, puree some of the lentils to give the soup some body, and add the tomato and any salt that you wish.

CROCK POT SPLIT PEA AND LENTIL SOUP

Crock Pot Split Pea and Lentil Soup image

For a truly vegetarian soup, substitute vegetable bouillon for the chicken soup base. This recipe almost overflowed my 4-quart crockpot, you might want to halve the ingredients. I cooked it on high for the entire 8 hours because it was so full, but if you halve it, cooking it on low for the same amount of time will work fine.

2 celery ribs, chopped
2 garlic cloves, chopped
fresh ground black pepper, to taste
2 tablespoons italian seasoning

Steps:

  • Dump it all in the crock pot.
  • Cook on high for 8 hours or until beans are soft.
  • If you like it creamy, puree some or all of it with an immersion (hand held stick) blender.

CROCK POT LENTIL SOUP

Crock Pot Lentil Soup image

So easy yet SO tasty! Don't let the simple ingredients fool you; this is one dynamite soup!

Provided by Laurie Sanders

Categories     Other Soups

Time 8h20m

Number Of Ingredients 11

1 lb bag of lentils
4 c chicken broth
4 c water
1 Tbsp olive oil
1 medium onion
2 stalks of celery
4 medium carrots
1 large hamhock
2 tsp salt
1 dash(es) black pepper
1 c additional water or chicken broth

Steps:

  • 1. Place 1 bag of lentils (about 2 cups) in your crock pot with the 4 cups of chicken broth and 4 cups of water.
  • 2. Cut up onion, celery and carrots and mince fine in a food processor or by hand. Saute the veggies in a large frying pan with 1 tablespoon of olive oil until soft. Add them to the crock pot.
  • 3. Stir everything up and add the hamhock. Cook on low all day. (I put mine in at 7 in the morning and we didn't eat it until nearly 9 that night. It will be fine.)
  • 4. After it has cooked between 6 and 8 hours take out the hamhock and get rid of the fat and bone. Chop up the meat and put it back in with the lentils. Add the salt and pepper to taste. I found 2 teaspoons of salt was just right but a saltier hamhock may mean you don't need to add as much salt.
  • 5. Add another 1 to 2 cups of chicken broth or water to thin it back down to soup consistency at this point and allow to simmer a little longer. Serve it up, top it with sour cream and enjoy!

Tips:

  • Use a variety of lentils: This will give your soup a more complex flavor and texture. Brown and green lentils are popular choices, but you can also use red lentils for a creamier soup.
  • Soak your lentils before cooking: This will help them to cook more evenly and quickly. If you don't have time to soak them, you can still cook them without soaking, but they will take a little longer.
  • Use a flavorful broth: The broth is the base of your soup, so make sure it's packed with flavor. You can use chicken broth, vegetable broth, or even beef broth. If you're using canned broth, be sure to choose a low-sodium variety.
  • Add plenty of vegetables: Vegetables add flavor, nutrients, and color to your soup. Feel free to add any vegetables you like, but some good options include carrots, celery, onions, potatoes, and spinach.
  • Season your soup to taste: Once your soup is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, garlic powder, or other spices.

Conclusion:

Crock-pot lentil soup is a delicious, hearty, and healthy meal that's perfect for a cold winter day. It's also a great way to use up leftover lentils. With a few simple ingredients and a little bit of time, you can have a delicious and nutritious soup that the whole family will enjoy. So next time you're looking for a quick and easy meal, give crock-pot lentil soup a try.
