CROCK POT BEEF TIPS STROGANOFF

Crock Pot Beef Tips Stroganoff image

I have always loved beef stroganoff and using the crock pot makes this recipe easy! I like to enjoy this with a fresh green salad and crusty bread and butter, with fruit salad for dessert.

Provided by Diane Whitbeck

Categories     Beef

Time 5h20m

Number Of Ingredients 14

2 lb beef tips or stew meat
1 pkg onion soup mix
1 tsp thyme, dried
1/2 tsp oregano, dried
1/4 tsp clove, ground
4 Tbsp worcestershire sauce
5 - 6 oz mushroom pieces, fresh or canned
1 can(s) mushroom soup, condensed
1 c dry red wine (i used merlot)
2 c beef broth or water
salt and pepper, to taste
1 c sour cream
10 oz egg noodles, uncooked
cooking spray

Steps:

  • 1. Spray crock pot with cooking spray, I used canola.
  • 2. Add first 11 ingredients to crock pot in order listed. Turn on high and cook for one hour. After one hour, stir ingredients thoroughly. Continue to cook on high for 3.5 more hours.
  • 3. After a total of 4.5 hours on high, stir in sour cream to blend throughout mixture. Then add egg noodles, ensuring they are covered by liquid. Add more water, if necessary. Adjust salt and pepper, as needed. Cook an additional 30 minutes on high, until noodles are tender. Plate and enjoy!
  • 4. NOTE: For those of you that do not cook with wine, you can substitute 1/2 - 3/4 cup beef broth (or water) and 2 - 3 Tbsp each of lemon juice and balsamic vinegar. Can be cooked on low setting for 6 - 8 hours. Add sour cream and noodles for last 45 minutes of cooking time.

Tips:

  • Use high-quality beef. The quality of the beef will greatly impact the flavor of your stroganoff, so it's worth splurging on a good cut of meat. Look for beef that is well-marbled and has a deep red color.
  • Don't overcook the beef. Beef tips should be cooked to medium-rare or medium, so that they remain tender and juicy. Overcooked beef will be tough and chewy.
  • Use a good quality broth. The broth is an important part of the stroganoff sauce, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich, flavorful taste.
  • Don't skimp on the mushrooms. Mushrooms are a key ingredient in stroganoff, and they add a lot of flavor and texture to the dish. Use a variety of mushrooms, such as cremini, shiitake, and oyster mushrooms.
  • Serve the stroganoff over egg noodles or rice. Egg noodles and rice are both classic accompaniments to stroganoff. Cook the noodles or rice according to the package directions.

Conclusion:

Crock-Pot Beef Tips Stroganoff is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The beef tips are tender and juicy, the sauce is rich and flavorful, and the mushrooms add a lot of flavor and texture. Serve the stroganoff over egg noodles or rice, and you have a meal that the whole family will love.
