My family loves this, and so do all my guests. They regard it as a special treat, especially for parties.

½ (3 pound) whole chicken, deboned and cut into bite size pieces
½ teaspoon ground black pepper
salt to taste
1 teaspoon garlic powder
1 cup rolled oats
¼ cup toasted sesame seeds
1 tablespoon chicken bouillon powder
¼ teaspoon monosodium glutamate (MSG)
¼ teaspoon curry powder
¾ cup white rice flour
¼ cup cake flour
½ teaspoon salt
¾ cup chicken stock
1 teaspoon onion powder
½ teaspoon dried basil
½ teaspoon dried oregano
2 quarts vegetable oil for frying

Steps:

  • Coat chicken with 1/2 teaspoon black pepper, salt, and garlic powder. Chill for 4 hours.
  • In a medium bowl, mix together oats, sesame seeds, 1/2 teaspoon salt, chicken granules, and monosodium glutamate. Set aside.
  • In another bowl, combine rice flour, cake flour, 1/2 teaspoon salt, onion powder, basil, oregano, and chicken stock.
  • Dip the bite size chicken into the chicken stock mixture, and roll in sesame seed mixture.
  • Heat oil to 365 degrees F (185 degrees C). Fry the chicken till golden.

Number Of Ingredients 10

1 1/4 cups corn flake crumbs
1/4 cup sesame seeds
3/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground red pepper
1/2 cup plain nonfat yogurt
2 tablespoons honey
8 boneless skinless chicken breasts
2 tablespoons margarine, melted (can use low-fat)

Steps:

  • Preheat oven to 400.
  • Spray a 15x10" jelly roll pan/cookie sheet with cooking spray.
  • Set aside.
  • Combine first 6 ingredients in a large zip-loc bag.
  • Set aside.
  • Combine the yogurt and honey in a shallow dish.
  • Add chicken, a few pieces at a time, to the yogurt mixture, turning to coat.
  • Add chicken pieces to the zip-loc bag; seal, and shake to coat.
  • Remove chicken from bag, and place on the prepared baking sheet.
  • Leave a little space between each piece for better browning.
  • Drizzle melted butter over chicken pieces.
  • Bake at for 45 minutes or until chicken is done.

Tips:

  • To make the chicken extra crispy, double coat it in the cornstarch mixture.
  • Use a large enough skillet or wok to prevent the chicken from overcrowding.
  • Heat the oil over medium-high heat to get the chicken nice and crispy.
  • Don't stir the chicken too much while it's cooking, or it will become tough.
  • Make sure the sauce is nice and thick before adding the chicken back in.
  • Serve the chicken immediately with rice or noodles.
