Categories     Potato     Side     Vegetarian     Quick & Easy     Boil

Yield 4-6 Servings

Number Of Ingredients 6

1kg / 2.2lbs new potatoes (if you're using larger potatoes, you can cut them to the size you like)
4-6 cloves of garlic, chopped
50ml olive oil
2 tbsp roughly chopped sage
1 lemon
Salt and pepper

Steps:

  • 1. Boil the potatoes in plenty of salted water. Pass a knife through it to check for doneness after 7-9 minutes. Longer, if you're using larger potatoes. 2. Once boiled, cut the potatoes into half lengthwise and transfer to a big box that will hold all the potatoes and still have additional room. Shake the box vigorously until the potatoes look smashed on the edges. 3. Toss with garlic, olive oil, sage, juice of lemon, salt and pepper. 4. Transfer to a roasting pan and layer the potatoes in a single layer. 5. Roast the potatoes in the oven at 200C/390F for 30-40 minutes until crispy, golden and brown. 6. Remove from the oven and serve immediately, perhaps with a sprinkling of chopped parsley.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 9

2 lbs red potatoes, large cut into 8 wedges
1 tablespoon cornstarch
1/2 teaspoon garlic powder
salt and pepper
3 tablespoons vegetable oil
1 tablespoon unsalted butter, softened
1 garlic clove, large and minced
1 teaspoon minced fresh parsley
1/8 teaspoon lemon zest

Steps:

  • Adjust oven rack to upper-middle position, place rimmed baking sheet on rack, and heat oven to 450°F.
  • Meanwhile, toss potatoes, cornstarch, garlic powder, 3/4 teaspoon salt, and 1/4 teaspoon pepper together in large bowl. Carefully remove preheated baking sheet from oven, add oil, and tilt baking sheet to evenly coat with oil. Place potatoes, cut side down in single layer, on baking sheet. Roast until browned around edges, about 30 minutes.
  • While potatoes roast, mix butter, garlic, parsley, and zest together in medium bowl. Remove baking sheet from oven and, using metal spatula, turn potatoes skin side down. Roast until potatoes are crisp and deep golden brown, 10 to 15 minutes.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or fingerling potatoes, are best for roasting because they hold their shape well. Avoid starchy potatoes, such as Russet potatoes, as they tend to fall apart when roasted.
  • Cut the potatoes evenly: This will help them cook evenly. If the potatoes are cut too small, they will overcook and become mushy. If they are cut too large, they will take too long to cook and may not be cooked through.
  • Toss the potatoes in oil: This will help them crisp up in the oven. You can use olive oil, vegetable oil, or melted butter. You can also add some herbs or spices to the oil for extra flavor.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and tender on the inside. The ideal temperature for roasting potatoes is 425 degrees Fahrenheit.
  • Don't overcrowd the pan: If the potatoes are too crowded in the pan, they will not cook evenly. Make sure there is enough space between the potatoes so that they can circulate air.
  • Roast the potatoes until they are golden brown and crispy: This will take about 20-30 minutes, depending on the size of the potatoes. You can check the potatoes by piercing them with a fork. If they are tender, they are done.

Conclusion:

Crispy roasted garlic potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are perfect for a weeknight dinner or a special occasion. With a few simple tips, you can make roasted potatoes that are crispy on the outside and tender on the inside.
