CRISPY FRIED EGGPLANT PARMESAN ROUNDS
These crispy fried eggplant Parmesan rounds are first fried then layered in a casserole pan with fresh mozzarella, sauce and basil and baked until the cheese is golden and bubbly.

Steps:
- Slice the eggplant into round circles about a 1/4 inch thick leaving the skin on. Sprinkle the eggplant with kosher salt and allow the eggplant to sit for 30 minutes. Then rinse and pat dry the slices with paper towels.
- Preheat the oven to 450°F. Dip each slice into the egg and then immediately into the breadcrumbs coating each side well. Add salt and pepper to each disc.
- In a large sauce pan, heat the oils together to medium high heat. Once the temperature has been reached reduce the heat to medium and add the eggplant slices. Fry each round for about three minutes a side or until golden brown. Reduce the heat if the temperature is too hot or if the eggplant is cooking too quickly.
- Once the eggplant is golden brown remove it to a separate baking dish that is coated with a thin layer of tomato sauce. Top each round slice with the shredded cheeses and place it in the oven and bake it until the cheese has melted, about five minutes.
- Top each eggplant slice with fresh basil, more tomato sauce and fresh Parmesan cheese. Serve with a side of spaghetti.

- Preheat oven to 400 degrees F.
- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.
EASY BAKED PARMESAN POTATO ROUNDS
Steps:
- Pre heat oven to 375°, line a large cookie sheet or two with parchment paper.
- Peel and slice potatoes into thick slices, then place slices in a large bowl of cold water, let sit for 20 minutes. Then drain well and towel dry.
- On a small plate whisk together the flour, parmesan cheese, parsley and salt.
- Brush one side of the potato slices with olive oil and then coat in parmesan cheese mixture place on prepared cookie sheet coating side down.
- Brush top side of slices with olive oil and sprinkle with remaining parmesan mixture. Spray or drizzle with a little extra olive oil.
- Bake in oven for approximately 25 minutes, the last 3-6 minutes place under the broiler if desired (for extra browning). Sprinkle with a little salt and serve immediately. Enjoy.
- **I serve mine with some mayo and chopped fresh parsley.

- Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.

- Set oven to 450 degrees (yes 450 degrees, or even a little higher if possible, this will create a crispy crust!).
- In a bowl mix together the panko bread crumbs with seasoned salt, black pepper, garlic powder, cayenne (if using) and Parmesan cheese.
- Place the egg whites into a shallow bowl.
- Dip the zucchini slices into the egg whites (letting any excess egg whites drip off).
- Coat the slices in the panko mixture (use fingers to firmly adhear the mixture to the slices if necessary).
- Place on a greased baking sheet.
- Bake for about 5-6 minutes; turn over and continue to bake for another 6-9 minutes, or until browned and crispy.
