Tips:

  • Use fresh, unsweetened coconut: Fresh coconut provides a more intense flavor and aroma compared to sweetened or dried coconut.
  • Shred the coconut finely: Finely shredded coconut adheres better to the shrimp and creates a crispy coating.
  • Use panko breadcrumbs for a crispier coating: Panko breadcrumbs are lighter and airier than regular breadcrumbs, resulting in a crispier coating.
  • Season the coconut mixture generously: Don't be afraid to add plenty of seasonings to the coconut mixture. This will enhance the flavor of the shrimp.
  • Coat the shrimp evenly: Make sure the shrimp are evenly coated with the coconut mixture. This will ensure that they cook evenly and have a uniform golden brown color.
  • Shallow fry the shrimp in hot oil: Shallow frying the shrimp in hot oil helps them cook quickly and evenly. It also creates a crispy coating.
  • Drain the shrimp on paper towels: After frying, drain the shrimp on paper towels to remove excess oil.
