LAVASH FLATBREAD

Make thin and crispy homemade lavash (a very thin bread also known as 'cracker' bread) to pair with cheese and appetizers or for a pizza crust.

Provided by Jennifer Meier

Categories     Bread

Time 1h10m

Yield 6

Number Of Ingredients 6

2 3/4 cup all-purpose flour
1 teaspoon salt
2/3 cup plus 1 tablespoon water
1 large room-temperature egg
4 tablespoons extra-virgin olive oil
Sea salt (optional)

Steps:

  • Gather the ingredients.
  • In a large bowl, whisk together the flour and salt.
  • In a smaller bowl, beat together the water, egg, and 2 tablespoons of the extra-virgin olive oil until well mixed.
  • Add the wet ingredients to the bowl with flour and mix well. Knead with your hands until the dough comes together, but don't overdo it as the end result will be tough. If too wet, add a teaspoon of flour at a time until the dough comes together.
  • Preheat the oven to 400 F. Split the dough into 2 balls. Let the balls of dough rest, covered, for at least as long as it takes for the oven to heat, or ideally for 30 to 40 minutes.
  • Lightly grease 2 un-rimmed cookie sheets with some of the remaining olive oil. Place the cookie sheets on a flat surface with a towel underneath so they don't slip. Place one ball of dough on each cookie sheet and roll the dough out as thin as possible, the thinner the dough, the crispier the flatbread.
  • Brush each flatbread with the remaining olive oil and sprinkle with sea salt if desired.
  • Bake for 15 to 20 minutes, or until the flatbread is lightly browned and crispy.
  • Remove from oven and serve immediately.
  • Enjoy.

CRISPY BEER FLAT BREAD

Crispy Beer Flat Bread image

This is a very easy and fast to make snack or appetizer which can be served with your favorite dip, spread, salsa or sauce. But it is also delicious on its own. The beer in it adds a fantastic flavor and is the cause of the crispy bubbles which are formed during baking. The recipe is for one baking tray, but you can easily make it for a large number of guests. Men will (probably) like it with a glass of beer and a "hot" or "spicy" dip. And be prepared for a second or third serving, because this flat bread will gone fast. I have seen the making of this bread in a German TV show, but can't remember who make it. But whoever invented this bread, thank you for this fantastic flat bread.

Time 30m

Yield 1 baking tray, 2-4 serving(s)

Number Of Ingredients 6

2 cups all-purpose flour
1 teaspoon salt
3/4 cup beer
3 tablespoons olive oil
1 garlic clove, crunched
1 tablespoon dried herbs (thyme, rosemary, oregano, and or or marjoram)

Steps:

  • Preheat oven (480-490 F, 250-260 C). Put the baking tray into the oven. So it will be heated up, too.
  • Mix olive oil and garlic and set aside.
  • Sieve flour with salt and add beer. Mix with hands until dough is formed. Knead dough for 5 minutes with slightly floured hands. Let rest dough for about 10 minutes.
  • On a slightly floured working platform, roll out the dough with a rolling pin. It should be thin (if you like the bread very crispy roll out the dough very thin). Place the dough on baking paper (size of the baking tray).
  • Brush the dough with the olive oil. Sprinkle it with herbs (you could use more or less than 1 tablespoon).
  • Put dough (on baking paper) on the baking tray in the oven and bake for about 5 - 10 minutes until it is golden brown. During baking the bread will develop several "bubbles".
  • Take out of the oven and let cool on a cooling rack. Serve slightly warm or cool.
  • NOTE on herbs: use your favorite herbs. If you like the herbal flavors you can use more. But you could also leave them out completely. You could also use an "Italian herbs mixes". You can also use fresh herbs (if at hand).
  • NOTE on olive oil: I only use the oil for brushing and don't use the garlic in it. If you like a garlicky styled bread, you can use the garlic for brushing, too.

Yield Makes 1 loaf

Number Of Ingredients 6

3 cups flour
1 tablespoon baking powder
3 tablespoons sugar
1 teaspoon salt
1 bottle (12 ounces) beer, at room temperature
1/4 cup unsalted butter, melted

Steps:

  • Preheat the oven to 375°F. In a mixing bowl, combine all the dry ingredients. Add the beer all at once, mixing as little as possible; the batter should be lumpy.
  • Pour the batter into a 9-x-5-x-3-inch loaf pan and brush with the melted butter. Bake in the oven for 35 to 40 minutes, or until an inserted skewer comes out clean. Turn out onto a rack to cool.

Tips:

  • Use a high-quality beer for the best flavor. A light or amber beer works well.
  • Chill the beer before using it. This will help the dough rise better.
  • Don't overwork the dough. Overworking will make the dough tough.
  • Let the dough rise in a warm place for about an hour, or until it has doubled in size.
  • Roll out the dough on a lightly floured surface. The dough should be about 1/4-inch thick.
  • Top the dough with your favorite toppings. Some popular options include cheese, vegetables, and meat.
  • Bake the flatbread in a preheated oven at 450 degrees Fahrenheit for about 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  • Let the flatbread cool for a few minutes before slicing and serving.

Conclusion:
