CRISP STUFFED CHICKEN CUTLETS

Crisp Stuffed Chicken Cutlets image

The chef Alexandra Raij modeled this recipe on a traditional Spanish dish called flamenquines, in which flattened chicken breasts are stuffed with ham and cheese, then rolled up, coated in egg and bread crumbs and fried. Her recipe mostly follows that lead, but instead of pounding the breasts and rolling them up with the stuffing, she used thin cutlets of chicken and layered the stuffing between two of them, sealing them together with an egg mixture. Fried to a golden hue, the dish is both crunchy and greaseless. The crumbs insulate the delicate meat and help keep it from overcooking.

Time 25m

Yield 3 servings

Number Of Ingredients 14

6 boneless, skinless chicken cutlets (about 1 1/4 pounds total)
Kosher salt
Freshly ground black pepper
2 large egg whites
2 tablespoons cornstarch
1 tablespoon chopped parsley
2 teaspoons minced garlic
Dijon mustard
1 1/2 ounces thinly sliced provolone cheese (1 1/2 slices)
1 1/2 ounces thinly sliced ham (1 1/2 slices)
3 tablespoons sauerkraut, packed, more for serving
3/8 teaspoon caraway seeds
2 cups plain bread crumbs
2 tablespoons extra virgin olive oil, for frying

Steps:

  • Season chicken lightly with salt and pepper. In a bowl, whisk together the egg whites, cornstarch, parsley and garlic until lumps dissolve and mixture is slightly foamy. Set aside.
  • Brush one side of each chicken cutlet with mustard. Divide cheese and ham among 3 cutlets and place on mustard side. Top each with 1 tablespoon sauerkraut and 1/8 teaspoon caraway seeds. Arrange remaining 3 cutlets mustard-side down on top of sauerkraut to sandwich the ham and cheese. Press to seal.
  • Dip stuffed cutlets in egg white mixture and dredge in bread crumbs. (You can do this several hours ahead and refrigerate until needed).
  • Heat oil in a large skillet over medium-high heat. Carefully place cutlets in hot pan and fry until dark brown and cooked through, 2 to 3 minutes a side. Transfer to a paper towel-lined plate to drain; serve hot, with additional sauerkraut on the side.

CHICKEN FRIED STEAK I

Chicken Fried Steak I image

Breaded and deep fried beef cutlets are known as chicken fried steak because of the similarity in cooking method to fried chicken. This is a family recipe that we have used for years. Vegetable oil may be used in place of shortening for frying.

Time 45m

Yield 4

Number Of Ingredients 10

1 pound boneless beef top loin
2 cups shortening
1 egg, beaten
1 cup buttermilk
salt and pepper to taste
¼ teaspoon garlic powder
1 cup all-purpose flour
¼ cup all-purpose flour
1 quart milk
salt and pepper to taste

Steps:

  • Cut top loin crosswise into 4 (4 ounce) cutlets. Using a glancing motion, pound each cutlet thinly with a moistened mallet or the side of a cleaver.
  • In a large, heavy skillet, heat 1/2 inch shortening to 365 degrees F (185 degrees C).
  • While the shortening is heating, prepare cutlets. In a shallow bowl, beat together egg, buttermilk, salt and pepper. In another shallow dish, mix together garlic powder and 1cup flour. Dip cutlets in flour, turning to evenly coat both sides. Dip in egg mixture, coating both sides, then in flour mixture once again.
  • Place cutlets in heated shortening. Cook until golden brown, turning once. Transfer to a plate lined with paper towels. Repeat with remaining cutlets. Drain grease, reserving 1/2 cup.
  • Using the reserved drippings in the pan, prepare gravy over medium heat. Blend in 1/4 cup flour to form a paste. Gradually add milk to desired consistency, stirring constantly. For a thicker gravy add less milk; for a thinner gravy stir in more. Heat through, and season with salt and pepper to taste. Serve over chicken fried steak.

Yield 4 people

Number Of Ingredients 5

1 lb of thin sliced beef
1 teaspoon pepper
1 teaspoon salt
3 tablespoons of flour
1 egg

Steps:

  • Wash and tenderize the meat with meat tenderizer. ***Tip from Helen*** Cover the meat with the clear wrap and then use the smooth shaped side of the "hammer" to tenderize the meat.*** Season the meat with salt and pepper, cut into medium sized slices 6-7 inch long and 2-4 inch wide. (Or if your meat was cut before then leave as it is) Pour the flour in a disposable plate. In a separate deep dish beat the egg. (you may add 1 tablespoon of water for it to be beaten better and evenly). Season the egg mix with salt and pepper. Run the cutlet through the flour, then egg and then put on a hot frying pan (add the cooking oil just before putting your cutlets to fry). Fry the cutlets on each side until golden brown. Serve warm with mashed potato, rice or grilled vegetables. Enjoy! Helen @Helen's Cooking http://www.helenscooking.info

Tips for Making the Best Crisp Fried Beef Cutlets:

  • Choose high-quality beef cutlets that are evenly thick, about 1/2-inch thick, and have a good amount of marbling.
  • Tenderize the beef cutlets by pounding them with a meat mallet or rolling them out with a rolling pin.
  • Season the beef cutlets evenly with salt, pepper, and any other desired seasonings before cooking.
  • Dredge the beef cutlets in flour to help create a crispy coating.
  • Use a combination of butter and oil to fry the beef cutlets, as this will help prevent the butter from burning and will give the cutlets a nice golden brown color.
  • Cook the beef cutlets over medium heat, flipping them once, until they are cooked through and crispy.
  • Let the beef cutlets rest for a few minutes before serving to allow the juices to redistribute.
