1/2 cup brandy
1 cup beef broth
1/2 cup heavy whipping cream
4-1/2 teaspoons cornstarch
4-1/2 teaspoons water
1/4 teaspoon salt
4 beef tenderloin steaks (6 ounces each)

Steps:

  • In a large skillet, saute mushrooms and shallot in butter until tender. Add garlic; cook 1 minute longer. Remove from the heat. 1 tablespoon finely chopped shallots
2 cups thinly sliced mushrooms
Salt and freshly ground pepper to taste
1/2 cup dry white wine
1 pound sea or bay scallops
2 tablespoons flour
1/2 cup milk
1 cup plus 2 tablespoons heavy cream
Pinch cayenne

  • Melt 1 tablespoon of the butter in a saucepan and add the shallots. Cook briefly, stirring, and add the mushrooms. Cook until wilted and add the salt, pepper, and wine.
