Time 12m

Number Of Ingredients 10

2 tbsps butter
4 cloves garlic (large)
1/2 cup Nobilo White Wine (I used sauvignon blanc)
3 tbsps chopped, fresh parsley
1/2 tsp red pepper flakes
1/2 cup heavy cream
1 tbsp butter
1 tbsp olive oil
2 lbs MSC Certified sea scallops (look for the MSC blue fish label)
salt and pepper

Steps:

  • In a medium sauce pan, over medium heat add the butter and garlic. Saute for about 1-2 minutes or just right before the garlic begins to brown.
  • Deglaze with the wine, turn heat to medium and reduce until half the liquid is gone.
  • Add the parsley, red pepper flakes, and cream. Turn the heat to low and simmer until the cream thickens. About 4-6 minutes. Set aside while you cook the scallops.
  • Rinse the scallops, pat with a paper towel until dry and season both sides with a little sea salt and pepper.
  • In a cast iron pan, over medium high heat, heat the butter and olive oil for a minute or two (or until the pan sizzles when you add a drop or two of water).
  • Add the scallops, careful not to overcrowd the pan, and cook until opaque. This is takes about two minutes on each side (depending on the size of scallop.
  • Pour the garlic cream sauce over the scallops and serve.

Coquilles St. Jacques (Scallops with Mushrooms in Cream Sauce) image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 10

4 tablespoons butter
1 tablespoon finely chopped shallots
2 cups thinly sliced mushrooms
Salt and freshly ground pepper to taste
1/2 cup dry white wine
1 pound sea or bay scallops
2 tablespoons flour
1/2 cup milk
1 cup plus 2 tablespoons heavy cream
Pinch cayenne

Steps:

  • Melt 1 tablespoon of the butter in a saucepan and add the shallots. Cook briefly, stirring, and add the mushrooms. Cook until wilted and add the salt, pepper, and wine. Add the scallops and bring to the boil. Cook until all the scallops are heated through, stirring gently as necessary. Take care not to let the scallops overcook or they will toughen. Using a slotted spoon, remove and set aside the scallops and mushrooms. Reserve the liquid. There should be about 3/4 cup of liquid. Melt 2 tablespoons of butter in a saucepan and add the flour, stirring rapidly with a wire whisk. When blended add the reserved liquid, stirring until thickened and smooth. Add the milk and 1 cup of the cream. Cook for about 5 minutes. Add salt and pepper to taste and a pinch of cayenne. Whip the remaining 2 tablespoons of heavy cream. Fold it into the sauce. Use 6 individual scallop shells or ramekins. Spoon equal portions of the scallops and mushrooms into each shell. Spoon the sauce over the scallop mixture. Preheat the broiler to high. Place the filled shells under the broiler about 6 inches from the source of heat and bake until a nice brown glaze forms on top. As the scallops broil, turn shells occasionally for even browning, about 5 minutes. Serve immediately.

SCALLOPS IN GARLIC CREAM SAUCE

Scallops in Garlic Cream Sauce image

I didn't really get this recipe from anyone, it's just (for as long as I can remember) one of the basic ways that I have always prepared scallops. It's easy, quick to prepare and the sauce really complements the scallops. I've prepared this with and without the wine (on those rare occasions when I happened to be out of my favorite white wine), and it is just as delicious either way. That's why I listed that ingredient as optional.

SAVORY SEA SCALLOPS IN WHITE WINE SAUCE

Savory Sea Scallops in White Wine Sauce image

This is such an easy dish but with great end results! I serve it with a pasta such as my Recipe #55679. Yummy!

Provided by polly salama

Categories     Low Cholesterol

Time 15m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2 tablespoons olive oil
1 1/2 lbs sea scallops
2 cups dry white wine
3 tablespoons fresh lemon juice
1 tablespoon butter
2 garlic cloves, minced
2 tablespoons minced parsley
fresh ground pepper

Steps:

  • Heat oil in heavy skillet over high heat.
  • When oil begins to smoke add scallops.
  • Sear each side for one minute or until each side is golden brown.
  • Add 1/2 cup of wine and lower heat to medium.
  • Simmer for 2 minutes.
  • Remove scallops from pan.
  • Add remaining wine and lemon juice, and garlic.
  • Bring to a boil and reduce by half.
  • Add butter, parsley and season with pepper.
  • Place scallops on a plate and smother with sauce.
  • Serve.

Tips:

  • Use fresh scallops. Fresh scallops have a sweet, briny flavor that is perfect for this dish. If you can't find fresh scallops, frozen scallops will work just fine.
  • Sear the scallops properly. Searing the scallops gives them a nice golden brown crust and helps to lock in their flavor. To sear the scallops, heat a large skillet over medium-high heat. Add the scallops and cook for 2-3 minutes per side, or until they are golden brown and cooked through.
  • Use a good quality white wine. The white wine in this sauce adds a lot of flavor, so it's important to use a good quality wine. Choose a dry white wine that you would enjoy drinking on its own.
  • Don't overcook the sauce. The sauce should be cooked until it is thickened and creamy, but not too thick. If you overcook the sauce, it will become too thick and gloopy.
  • Serve the scallops immediately. Creamy scallops with white wine sauce are best served immediately, while the scallops are still hot and juicy.

Conclusion:

Creamy scallops with white wine sauce is a delicious and easy-to-make dish that is perfect for a special occasion. The scallops are seared until golden brown and then simmered in a creamy white wine sauce. The result is a dish that is both elegant and flavorful. Serve the scallops with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
