These onions are so rich, sweet and delicious with any kind of meat, or no meat at all! They make a beautiful presentation, also. Warning: You will want to drink the sauce!

4 medium sweet onions, ends removed, sliced about 1/4-inch thick
3 Tbsp olive oil
1 c heavy cream
1/4 c white wine
1/3 c parmesan cheese, fresh grated
salt and pepper

Steps:

  • 1. Preheat oven to 375. Take care not to disturb the onion slices. Keep them together and intact. Place them on a parchment lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 15 minutes.
  • 2. Meanwhile, in a small saucepan, bring cream and wine to a simmer, just until it gets bubbly around the edges. Remove from heat and set aside.
  • 3. Now remove the onions from the oven and very carefully transfer them to a shallow baking dish. Turn the oven up to 450. Slowly pour the cream mixture over the onions and sprinkle each with parmesan cheese.
  • 4. Cover the dish with foil and return to the oven for 20 minutes. Uncover and bake for 5 more minutes until onions get browned and caramelized.

3 tablespoons extra-virgin olive oil
Salt & pepper
1 cup heavy cream
1/4 cup white wine
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F.
  • Carefully place onions onto parchment lined baking sheets, keeping the rings intact. Drizzle with olive oil and season with salt and pepper. Roast for 15 minutes.
  • While the onions are roasting, place the heavy cream and wine in a small saucepan and simmer until it starts to bubble around the edges. Remove from heat and set aside.
  • Once onions are removed from oven, raise the temperature to 450 degrees F.
  • Carefully transfer them to a shallow baking dish, again, keeping the rings intact. Slowly pour the cream sauce over all the onions. Sprinkle each onion with the Parmesan cheese.
  • Cover baking dish with foil and return to the oven for another 20 minutes. Remove foil and cook for another 5 minutes, letting the onions get brown and caramelized.

4 medium yellow onions
1/4 cup extra virgin olive oil
kosher salt & freshly ground black pepper
1 cup heavy cream
1/4 cup dry white wine
2 -3 ounces parmigiano-reggiano cheese, shaved (about 2 tablespoons)

Steps:

  • Preheat the oven to 350°F.
  • Slice the onions into 1/4-inch-thick rounds and lay them in a shallow baking pan, such as a sheet pan or jelly roll pan. Drizzle with the olive oil and season to taste with salt and pepper. Roast for 15 to 18 minutes, or until lightly browned.
  • Meanwhile, in a medium saucepan, bring the cream and wine to a simmer over medium-high heat. As soon as the liquid starts to bubble around the edges, remove from the heat.
  • Spoon about 1-2 tablespoon of the cream mixture over each onion slice. Cover with aluminum foil, return to the oven, and cook for about 25 minutes. increase the oven temperature to 450°F.

100ml double cream
3 bay leaves
25g parmesan (or vegetarian alternative), finely grated

  • Heat the oven to 200C/fan 180C/gas 6. Peel and trim the roots of the onions but leave them whole. Cook in a large pan of boiling water for 25 mins until tender, then drain, reserving a little cooking water.
  • Season the cream and mix in 2 tbsp of the onion water. When the onions are cool enough to handle, slice each in half through the root. Lay the onion halves, cut side down, in a large baking dish with the bay leaves.
