Number Of Ingredients 8

3 pounds large Yukon gold potatoes, peeled and cut in 3/4-inch chunks
5 large garlic cloves
Kosher salt and freshly ground black pepper
7 to 8 ounces garlic-and-herb goat cheese, at room temperature, such as Montrachet
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1 1/2 cups sour cream
1/2 cup half-and-half or milk
1/2 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F. Place the potatoes, garlic and 1 tablespoon salt in a large pot with enough water to cover the potatoes. Bring to a boil over high heat, reduce to a simmer and cook for 20 to 25 minutes, until very tender.
  • Drain the potatoes and garlic and process them together through a food mill fitted with the coarsest blade set on top of a bowl. While the potatoes are still hot, stir in the goat cheese, butter, sour cream, half-and-half, 4 teaspoons salt and 2 teaspoons pepper until smooth.
  • Pour the mixture into a 9-by-12-by-2-inch oval baking dish, smoothing the top. Sprinkle the Parmesan on top and bake for 30 to 40 minutes, until lightly browned. Serve hot.

Yield Makes 4 to 6 servings

Number Of Ingredients 8

1 cup whole milk
1 cup whipping cream
1 cup crumbled soft fresh goat cheese (such as Montrachet; about 5 ounces)
1 garlic clove, minced
1 1/2 teaspoons salt
3/4 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
2 pounds Yukon Gold potatoes, peeled, thinly sliced

Steps:

  • Preheat oven to 400°F. Generously butter 11x7x2-inch glass baking dish. Whisk first 7 ingredients in medium bowl to blend. Arrange 1/3 of potatoes in bottom of prepared dish, overlapping slightly and covering completely. Pour 1/3 of cream mixture over. Repeat layering potatoes and cream mixture 2 more times. Bake uncovered until potatoes are tender and top is golden brown in spots, about 1 hour 15 minutes. Serve hot.

Tips:

  • Use Yukon Gold or russet potatoes for the creamiest texture. Yukon Gold potatoes have a naturally buttery flavor and a smooth texture that makes them perfect for creamy mashed potatoes. Russet potatoes are also a good choice, as they have a high starch content that helps to thicken the potatoes.
  • Peel the potatoes before boiling them. Peeling the potatoes will help to remove any dirt or debris from the potatoes and will also help them to cook more evenly.
  • Boil the potatoes in salted water. Salting the water will help to season the potatoes and will also help to prevent them from sticking to the pot.
  • Drain the potatoes well before mashing them. Draining the potatoes well will help to remove any excess water and will help to make the potatoes creamier.
  • Use a potato ricer or food mill to mash the potatoes. A potato ricer or food mill will help to create smooth and creamy mashed potatoes. If you don't have a potato ricer or food mill, you can mash the potatoes with a fork or a potato masher.
  • Add milk, butter, and salt and pepper to taste. Start with a small amount of milk and butter and then add more until you reach the desired consistency. Season the potatoes with salt and pepper to taste.
  • Stir in goat cheese and fresh sage. Once the potatoes are mashed to your liking, stir in goat cheese and fresh sage. Goat cheese will add a tangy flavor to the potatoes, while fresh sage will add a savory flavor.
  • Serve the mashed potatoes immediately. Mashed potatoes are best served immediately, while they are still hot and creamy.

Conclusion:

Creamy mashed potatoes with goat cheese and fresh sage are a delicious and easy-to-make side dish that is perfect for any occasion. The creamy texture of the potatoes, the tangy flavor of the goat cheese, and the savory flavor of the fresh sage combine to create a dish that is sure to please everyone at the table.
