4 tablespoons flour
1/2 cup dry white wine
2 cups chicken stock/poaching liquid from Poached Chicken, recipe follows
1 cup cream or half-and-half
1 wheel Boursin (5.4 ounces) or other garlic-and-herb cheese
1 1/2 pounds cooked pulled or sliced Poached Chicken, recipe follows
2 to 3 tablespoons fresh chopped tarragon or 1 tablespoon dried tarragon
Fried Onions, homemade or store-bought, recipe follows
One 4- to 5-pound chicken
2 ribs celery, coarsely chopped
1 carrot, peeled and coarsely chopped
1 onion, peeled and quartered
2 cloves garlic, crushed
1 lemon, sliced
1 large fresh bay leaf
1 teaspoon whole black peppercorns
Herb bundle of parsley, rosemary and thyme tied with a string
Salt
Frying oil
1 small to medium onion, very thinly sliced
1 cup buttermilk

Steps:

  • For the casserole: Heat a few inches of water to a low boil, add salt and the green beans and cook 3 to 4 minutes to tender-crisp, drain.
  • Heat the EVOO in a large, deep skillet over medium to medium-high heat, add the mushrooms and lightly brown them, 7 to 8 minutes. Add the butter, shallots and garlic, season with salt, pepper and thyme, and stir 2 to 3 minutes more. Add the flour, stir a minute, add the wine, stir in the stock and thicken. Cover the chicken with water and bring to a boil; reduce the heat to a low, rolling simmer. Simmer 60 to 75 minutes, then cool the chicken in its stock. Strain the stock. Remove the chicken in large pieces from the skin and bones. Cut half of the meat into bite-size chunks. Thinly slice or pull the remaining meat.
  • Heat 2 to 3 inches of frying oil to 365 degrees F in a countertop fryer or in a deep medium pot over medium to medium-high heat. Separate the onion rings and soak in the buttermilk. Toss a few rings at a time into the flour and fry until crisp; drain on paper towels and repeat with the remaining onions.

CHICKEN, EGGPLANT, AND GREEN BEANS CASSEROLE

Chicken, Eggplant, and Green Beans Casserole image

This was one of the very first casseroles I made for my family. It was originally a green bean casserole recipe, but since I wanted this to be an (almost) all-in-one dish I added the ground chicken and eggplant. I also added more spices. My 2-year-old twins loved it and so did my hubby! It's a hearty dish that we usually eat with brown rice and/or crusty bread. It's also good served with a side of fresh and crisp green salad with tangy dressing. This casserole may be too mushy for some people. If you don't want it to turn out that way, you can substitute the ground chicken with 1 1/2 to 2 cups of cooked and cubed boneless, skinless chicken breast.

CREAMY GREEN BEAN CASSEROLE

Creamy Green Bean Casserole image

This is my own version of Green Bean Casserole, It uses a different ingredient, but I think it's the best. I hope You will like it too :) This recipe is what I make for holidays, but you can certainly scale it down to suit the amount you want to make. It does make less than it seems though, especially if you use the French style green beans (not to mention how good left overs are). Exact measurements aren't really neccesary though so don't be afraid to make less or more. For one can beans I'd use 2oz cream cheese and 1/3 can of cream of chicken.

Provided by PickleLover

Categories     Vegetable

Time 1h

Yield 5-8 serving(s)

Number Of Ingredients 6

3 (11 ounce) cans French style green beans (the ones sliced the long way)
4 ounces cream cheese, softened to room temp
1 cup French-fried onions
1 (10 1/2 ounce) can cream of chicken soup
salt and pepper
1 pinch garlic powder

Steps:

  • Heat over to 350°F and grease a 9x9 or whatever sized dish you want to use. I don't suggest a 9X13 but anything smaller will do.
  • Drain green beans VERY well, and mix with softened cream cheese, the soup, a pinch of garlic powder and salt and pepper to your liking.
  • Add 1/2 cup of the french friend onions.
  • Pour into greased pan and cover loosely with foil. Bake for about 25 minutes Then remove cover and stir.
  • Add remaining french fried onions to the top and bake uncovered for another 20 to 30 minutes Until it's bubbly and looks done.

CHICKEN AND GREEN BEAN CASSEROLE

Chicken and Green Bean Casserole image

Easy! Found majority of this recipe online & changed it up a little. We just added a dinner roll, but you could serve over mashed potatoes.

Provided by Aunt Sukki

Categories     Chicken Breast

Time 45m

Yield 4 serving(s)

Number Of Ingredients 9

1 tablespoon olive oil
4 boneless skinless chicken breasts
2 (14 1/2 ounce) cans green beans, drained
1 (10 1/2 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon black pepper
1/4 cup shreded parmesan cheese

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Quickly brown the chicken breasts (no more than a couple of minutes each side). Do not cook through. Remove from heat, and set aside.
  • Pour the green beans into a 2 quart casserole dish. Place the chicken on top of the beans.
  • In a small bowl, mix together the soup. milk & spices. Pour over the top of the chicken and green beans. Sprinkle Parmesan cheese over the top.
  • Bake uncovered at 350 degrees for 35 to 40 minutes in until the chicken is no longer pink, and the cheese is browned.

Tips:

  • Prep the Ingredients: Before you start cooking, measure and chop all the ingredients. This will make the cooking process smoother and faster.
  • Use Fresh Green Beans: Fresh green beans have a better flavor and texture than frozen or canned beans. If you can, try to use fresh green beans for this recipe.
  • Cook the Chicken Properly: Make sure the chicken is cooked all the way through before adding it to the casserole. You can check this by inserting a meat thermometer into the thickest part of the chicken. The internal temperature should be at least 165°F (74°C).
  • Use a Good Quality Cream Soup: The cream soup is a key ingredient in this recipe, so it's important to use a good quality soup. Look for a soup that is made with real cream and has a rich flavor.
  • Don't Overcook the Casserole: The casserole only needs to be baked for about 30 minutes, or until the sauce is bubbly and the cheese is melted. Overcooking the casserole will make the chicken dry and tough.

Conclusion:

The creamy chicken and green bean casserole is a classic comfort food dish that is perfect for a weeknight dinner or a potluck. It's easy to make and always a crowd-pleaser. So next time you're looking for a delicious and satisfying meal, give this recipe a try.
