CREAMY CHERRY FLUFF SALAD

Creamy Cherry Fluff Salad image

I already had a pretty serving bowl picked out for this creamy fruit salad and then I came across these cute mini coke glasses, so I used them instead. If you add a cherry on top and a straw, they look like mini milkshakes...but for these you'll need a spoon! I entered these cuties in the 2011 Texas Rice Festival cooking...

Time 10m

Number Of Ingredients 9

8 oz cream cheese, room temperature
1 can(s) sweetened condensed milk
1 Tbsp fresh lemon juice
1 can(s) cherry pie filling
1/2 c pineapple tidbits, drained
1/2 c mandarin oranges, drained
1/2 c finely chopped pecans
8 oz non-dairy whipped topping, thawed
cherries for garnish

Steps:

  • 1. Using an electric mixer, combine cream cheese, sweetened condensed milk and lemon juice until smooth.
  • 2. Using a spatula, gently fold in remaining ingredients.
  • 3. Garnish with cherries or as desired. Chill for at least an hour or until serving time (it will thicken as it chills).

Tips:

  • To make the fluff salad creamier, use a combination of whipped topping and sour cream. For a lighter version, use all whipped topping.

  • To make a vegan version of the salad, use vegan whipped topping and yogurt.
  • For a gluten-free version of the salad, make sure to use gluten-free marshmallows.
  • To make the salad ahead of time, prepare it up to 24 hours in advance. Store it in the refrigerator until ready to serve.
