CREAMY CHEDDAR CHEESE SOUP WITH CRISPY BACON & CHIVES RECIPE - (4.2/5)

Creamy Cheddar Cheese Soup with Crispy Bacon & Chives Recipe - (4.2/5) image

Provided by davidv

Number Of Ingredients 16

3/4 lb bacon, chopped (optional garnish)
4 Tbsp butter
1 large onion, finely diced
2 leeks, thinly sliced
2 cloves garlic, minced
2 large pimentos or roasted red peppers, diced
6 Tbsp flour
4 cups chicken stock or broth
1 (12-oz) beer (preferably ale or lager)
1-1/2 cups cream
1-1/2 cups milk
2-1/4 cups sharp cheddar cheese, grated
3/4 cup Colby cheese, grated
1/2 tsp cayenne
1 bunch of chives or green onions, chopped (2 Tbsp reserved, optional garnish)
Salt and white pepper, to taste (optional garnish)

Steps:

  • Render the bacon until crisp, stirring frequently, in a large stockpot over medium heat. Using a slotted spoon, remove the bacon from the pan onto a platter lined with paper towels. Drain the grease from the pan, leaving 2 Tbsp remaining. Turn the heat up to medium high and add the butter, onions, leeks, garlic, and pimentos. Cook for 4-5 minutes until onions soften and develop slight color. Add the flour and stir to form a pasty roux. Cook for an additional 1-2 minutes. Whisk in the stock, beer, cream, and milk. Reduce the heat and simmer for 10-15 minutes, or until the soup begins to thicken. Whisk in the cheeses, cayenne, and half of the chives. Allow the cheese to melt, then season with salt and white pepper to taste. Ladle into soup bowls and garnish with the crispy bacon and reserved chives, if desired.

Tips:

  • Choose the right cheese: For a smooth and creamy soup, use a good quality cheddar cheese. A sharp cheddar will give the soup a more intense flavor, while a mild cheddar will result in a more mellow soup.
  • Use a variety of vegetables: To add flavor, texture, and nutrients to the soup, use a variety of vegetables. Some good options include carrots, celery, onions, potatoes, and broccoli.
  • Don't overcook the vegetables: To keep the vegetables crisp and flavorful, don't overcook them. Aim to cook them until they are tender but still have a slight bite to them.
  • Make sure the roux is smooth: A roux is a mixture of butter and flour that is used to thicken the soup. To ensure a smooth roux, whisk the butter and flour together over low heat until the mixture is smooth and creamy.
  • Add the milk and cheese slowly: To prevent the soup from curdling, add the milk and cheese slowly, whisking constantly.
  • Season to taste: Once the soup is cooked, season it to taste with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika, to taste.

Conclusion:

Creamy cheddar cheese soup is a classic comfort food that is easy to make and always a hit with the whole family. By following these tips, you can make a delicious and creamy cheddar cheese soup that your friends and family will love. Serve it with a side of crusty bread or crackers for a complete meal.
