In June of 2020 we were still dealing with the Coronavirus ravaging our country and making us pretty much stir-crazy. Luckily in California the lockdown rules were loosening, and my husband and I were able to host some good friends at our home for the weekend. The weather was heating up and while we were spending the day by the pool (pretending we were at an exotic resort) my friend asked if I could make her a foofie drink. I went inside, took an inventory of my ingredients, and the COVID Creamsicle® cocktail was created.

Number Of Ingredients 8

1 fluid ounce good-quality vodka
½ cup ice as needed
1 scoop orange sherbet
1 scoop lemon sorbet
1 fluid ounce lemon-flavored sparkling water (such as Sanpellegrino®)
1 fluid ounce orange-flavored carbonated water (such as Perrier®)
1 fluid ounce Prosecco
1 slice lemon

Steps:

  • Pour vodka into a chilled single rocks glass or stemless wine glass and add ice. Add orange sherbet and lemon sorbet. Top with lemon-flavored sparkling water and orange-flavored carbonated water. Use a long-handled or tall drink spoon to quickly stir together until completely blended.
  • Top with Prosecco and garnish with lemon slice.

This tastes for all the world like a melted Creamsicle popsicle, and as such is much admired by the young ladies, if not some of the older ones as well. Dates back to the 1970's. As usual, using the very best ingredients will yield the best results, so don't get cheap with the juice and cream. While the filters are giving me a tough time, the pear liquer required is sold as "Austrian Pear Liquer", is sold in 25 oz bottles, and is a pale orangey-pink colour

1 1/2 ounces pear liqueur
1 1/2 ounces 18% table cream
1 1/2 ounces orange juice (Tropicana or better)
ice

Steps:

  • Using chilled ingredients, pour into a glass in the order stated.
  • Mix very well.
  • Add Ice.
