CREAMED PEARL ONIONS
This has been on my holiday tables for many years. This can be made a day or two ahead of time and just heat and serve when you are ready. This makes a lot of sauce...but it's the best part. You can easily add green peas and mushrooms....or crumbled bacon? This can even be finished as a casserole with a bread crumb...

Steps:
- Blanch onions in a large pot of boiling water 2 minutes, then drain and peel.
- Heat butter in a deep 12-inch heavy skillet over moderate heat until foam subsides, then cook onions, stirring occasionally, until golden in patches, about 8 minutes. Add sugar, salt, cloves, and enough water to cover onions and simmer, covered, until onions are tender but not falling apart, 25 to 30 minutes. Boil onions, uncovered, until liquid is reduced to about 1/2 cup, about 20 minutes more.
- Stir in cream and simmer, stirring, until slightly thickened, about 5 minutes. Discard cloves, then season with salt and pepper. Stir in parsley just before serving.
Tips:
- Choose small pearl onions: Smaller onions will cook more evenly and quickly.
- Trim the onions properly: Cut off the root end and a thin slice off the top.
- Don't overcrowd the pan: Cook the onions in a single layer so they can brown evenly.
- Use a good quality vegetable broth: This will add flavor to the dish.
- Don't overcook the onions: They should be tender but still have a slight bite.
- Make the crispy spiced breadcrumbs ahead of time: They can be stored in an airtight container at room temperature for up to 3 days.
- Serve the creamed pearl onions and fennel immediately: They are best enjoyed when they are hot and fresh.
Conclusion:
Creamed pearl onions and fennel with crispy spiced breadcrumbs is a delicious and elegant dish that is perfect for a special occasion. It is easy to make and can be prepared ahead of time, making it a great option for busy weeknights. The combination of sweet onions, creamy sauce, and crispy breadcrumbs is sure to please everyone at the table. This dish is also a great way to use up leftover vegetables. If you have any pearl onions or fennel that are starting to wilt, simply trim them and cook them according to the recipe. You can also use other vegetables, such as carrots, parsnips, or celery. Just be sure to adjust the cooking time accordingly.
