  • Separate the egg whites from the egg yolks. Place the egg yolks into a bowl and mash with a fork. Chop the egg whites into small pieces and set aside.

  • Whisk together cream and 2 teaspoons flour in a small bowl until just combined.

  • Discard coarse stems from spinach. In a 2- to 3-quart saucepan of boiling salted water cook spinach 2 minutes and drain in a sieve, pressing with back of a large spoon to remove as much water as possible. Finely chop spinach.
  • In a small nonstick skillet cook onion in butter over moderately low heat, stirring, until softened. Stir in spinach, cream, nutmeg, and salt and pepper to taste and cook, stirring, until hot.

I used to request my mom to make this recipe anytime I came home from college and even when I was older and went home to visit for awhile. Now my son starts begging for it whenever we get close to Easter, or any other time he thinks he can get me to hardboil some eggs. The passive cooking time is to hardboil the eggs - that can be done the night before.

  • Preheat oven to 350 degrees. Melt 2 tablespoons butter, toss with brioche cubes, and spread on a rimmed baking sheet. Toast until golden and crisp, about 8 minutes. Let cool completely.

1 Poached Chicken Breast (see recipe)
1/4 pound small mushrooms
3 tablespoons butter
2 tablespoons flour
3/4 cup chicken broth
1 tablespoon finely chopped shallots
2 tablespoons dry Sherry
1/2 cup plus 4 tablespoons heavy cream
1/8 teaspoon nutmeg
Salt and pepper to taste
8 eggs

Steps:

  • Preheat the oven to 400 degrees.
  • Remove the skin and bones of the chicken and discard. Cut the meat into half-inch cubes. There should be about one and one-half cups.
  • If the mushrooms are very small, cut them in half. If mediumsized, cut them into quarters. If they are large, slice them. There should be about one and one-half cups.
  • Melt two tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Add the broth and continue cooking, stirring, until thickened and smooth.
  • Melt one tablespoon of butter in a skillet and add the mushrooms and shallots. Cook about two minutes. Add the wine and cook about 10 seconds. Add the white sauce and blend. Add half a cup of the cream and stir. Season with nutmeg, salt and pepper to taste. Let simmer about one minute.

  • Set the souffle dishes in a pan of water. Bring the water to the boil. Place the pan with the souffle dishes in the oven and bake 20 minutes. Spoon one tablespoon of cream on top of each serving. Serve hot.
