RICH AND CREAMY ROASTED EGGPLANT SOUP

Rich and Creamy Roasted Eggplant Soup image

This is a great tasting soup, rich and creamy, with tangy goat cheese to balance out your taste sensation! If you want to, you can use chicken or vegetable broth in the place of the heavy cream--but I like the cream, myself!

Number Of Ingredients 10

3 tomatoes, halved
1 eggplant, halved lengthwise
1 small onion, halved
6 cloves garlic, peeled
2 tablespoons vegetable oil
1 tablespoon chopped fresh thyme
4 cups chicken broth
1 cup heavy cream
3 ½ ounces crumbled goat cheese
salt and pepper to taste

Tips:

  • Choose eggplants that are firm and have smooth, unblemished skin. Avoid eggplants that are soft, wrinkled, or have brown spots.
  • To prevent the eggplant from absorbing too much oil, slice it thinly and cook it over high heat.
  • If you don't have a steamer, you can cook the eggplant in a colander set over a pot of boiling water.
  • Use a good quality cheese that melts well, such as Parmesan, Gruyère, or mozzarella.
  • Add some fresh herbs, such as basil, oregano, or thyme, to the creamed eggplant for extra flavor.

Conclusion:

Creamed eggplant is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It's also a great way to use up leftover eggplant. With its creamy texture and rich flavor, creamed eggplant is sure to please everyone at your table.
