CREAMED CELERY, FROM 1928
I have a summer job in the local museum and I have access to the exhibits. On display are some old cookbooks and I often have time to browse them. My favorite is dated 1928. This recipe comes from that book.

Tips:
- Choose fresh celery: Look for celery stalks that are crisp, firm, and have a bright green color. Avoid stalks that are wilted or have brown spots.
- Cut the celery into uniform pieces: This will help them cook evenly. If the pieces are too big, they may not cook through, and if they are too small, they may overcook and become mushy.
- Use a good quality blue cheese: The type of blue cheese you use will have a big impact on the flavor of the dish. Choose a blue cheese that is creamy and flavorful, such as Gorgonzola, Roquefort, or Stilton.
- Don't overcook the celery: Celery should be cooked until it is tender but still has a bit of a crunch. If you overcook it, it will become mushy and lose its flavor.
- Serve immediately: Creamed celery is best served immediately after it is made. If you need to make it ahead of time, you can store it in the refrigerator for up to 3 days. Reheat it gently over low heat until warmed through.
Conclusion:
Creamed celery with blue cheese is a delicious and versatile side dish that can be served with a variety of main courses. It is easy to make and can be tailored to your own taste preferences. Whether you like your creamed celery mild or spicy, cheesy or tangy, there is a recipe out there that is perfect for you.
