Number Of Ingredients 13

3 tablespoons butter
1 onion, chopped
4 large carrots, chopped
1 clove garlic, chopped
4 cups water
4 tablespoons chicken bouillon powder
1 pound fresh broccoli florets
2 cups half-and-half
3 tablespoons all-purpose flour
¼ cup ice water
1 tablespoon soy sauce
½ teaspoon ground black pepper
¼ cup chopped parsley

Steps:

  • Melt butter in a saucepan over medium heat; add chopped onions, carrots, and garlic, and cook for 5 minutes, stirring occasionally until softened.
  • In a medium-sized cooking pot, add 4 cups water and chicken bouillon granules and bring to boil. Add precooked onion mixture to soup pot. Add broccoli florets, reserving a few pieces to be added near the end of cooking time. Reduce heat and simmer, covered, for 15 to 20 minutes or until broccoli is just tender.
  • In a blender or food processor, puree soup in batches and return to pot. Stir in half and half cream and remaining broccoli florets.
  • In a cup, mix flour with 1/4 cup cold water to form a thin liquid.
  • Bring soup to boil; add flour mixture slowly, stirring constantly to thicken soup as desired. Add soy sauce, black pepper, and stir well. Garnish with chopped parsley (or carrot curls) when serving. Serve soup hot or cold.

Tips:

  • Choose the right broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Clean the broccoli thoroughly: Rinse the broccoli under cold water and remove any dirt or debris. Cut the broccoli into small florets.
  • Cook the broccoli properly: Steam or boil the broccoli until it is tender but still has a slight crunch. Overcooked broccoli will become mushy.
  • Use a good quality cheese: The type of cheese you use will greatly affect the flavor of the soup. Use a sharp cheddar cheese for a浓郁flavor, or a milder cheese like mozzarella or Monterey Jack for a more subtle flavor.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of cayenne pepper for a little spice.
  • Serve the soup hot: Cream of broccoli soup is best served hot, garnished with fresh parsley or chives.
  • Store the soup properly: Cream of broccoli soup can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze the soup for up to 3 months.

Conclusion:

Cream of broccoli soup is a delicious and nutritious soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a creamy, flavorful soup that the whole family will enjoy.
