Steps:
- Melt butter in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in thyme until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and milk, and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in potatoes. Bring to a boil; reduce heat and simmer until potatoes are tender, about 12-15 minutes. Stir in chicken and cheese, a handful at a time, until smooth, about 1-2 minutes; season with salt and pepper, to taste. Tips:
- Choose the right potatoes: Yukon Gold or Russet potatoes are best for this soup, as they're both creamy and flavorful. Avoid waxy potatoes like Red Potatoes, as they won't break down as well in the soup.
- Don't skimp on the vegetables: The vegetables in this soup add flavor and texture. Don't be afraid to add more or less of your favorites, depending on your taste.
- Use a good quality cream of chicken soup: The cream of chicken soup is the base of this soup, so it's important to use a good quality one. Look for a soup that is made with real chicken and cream, and avoid soups that are made with artificial ingredients.
- Season to taste: Every palate is different, so be sure to season the soup to your liking. Salt, pepper, and garlic powder are all good starting points, but you can also add other spices like paprika, cumin, or chili powder.
- Serve with your favorite toppings: This soup is delicious on its own, but it's even better with your favorite toppings. Try adding a dollop of sour cream, a sprinkle of shredded cheddar cheese, or a few crumbled bacon bits.
Conclusion:
This cream of chicken and potato soup is a classic comfort food that's perfect for a cold night. It's easy to make and can be tailored to your own taste. So next time you're looking for a quick and easy meal, give this soup a try. You won't be disappointed.
