CREAM OF CAULIFLOWER SOUP II

Cream of Cauliflower Soup II image

I make lots of cream soups and this is a good 'basic' recipe. I originally made this in 1990 and always make some modifications - we like lots of garlic as reflected in this recipe!! I also add or substitute other vegetables, i.e., broccoli and spinach. I also use potatoes for thickening rather than cream to keep the fat down.

Tips:

  • Choose the right cauliflower: For the best flavor, use a fresh head of cauliflower that is firm and white. Avoid heads with any signs of browning or bruising.
  • Roast the cauliflower before simmering: Roasting the cauliflower before simmering it brings out its natural sweetness and depth of flavor.
  • Use a good quality broth: The broth you use will make a big difference in the flavor of the soup. Use a homemade broth if you have it, or choose a high-quality store-bought broth.
  • Don't overcook the soup: The soup is done when the cauliflower is tender but still has a slight bite to it. Overcooking the soup will make it mushy.
  • Season the soup to taste: Once the soup is done, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or saffron.

Conclusion:

Cream of cauliflower soup with saffron is a delicious and elegant soup that is perfect for a special occasion or a weeknight meal. It is easy to make and can be tailored to your own taste. With its creamy texture, delicate flavor, and beautiful color, this soup is sure to impress your guests.
