2 (2 pound) beef chuck roast, cut into 1/2-inch thick strips
½ cup red wine
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion, diced
3 cloves garlic, minced
2 tablespoons butter
1 cup sliced mushrooms
¼ cup butter
¼ cup all-purpose flour
1 ⅓ cups beef stock
1 tablespoon Worcestershire sauce
1 teaspoon prepared yellow mustard
2 teaspoons crushed red pepper flakes
⅓ cup sour cream
1 (3 ounce) package cream cheese, softened

4 lbs. chuck roast, cut into 1" cubes, trim fat
2 Tbl. butter, melted
1 tsp. coarse ground pepper
1 pkg. good seasons original italian salad dressing mix
1 large onion, chopped
2 cloves garlic, minced
1 Tbl. horseradish or horseradish sauce
2 Tbl. butter
8 oz. cream cheese, cubed
1 can cream of mushroom soup
1 (8 oz.) pkg. fresh sliced mushrooms
1 1/2 tsp. kitchen bouquet browning sauce

Steps:

  • 1. Cut the chuck roast into 1-inch cubes and remove all fat and place roast in crock pot. Drizzle melted butter over and then sprinkle the package of Italian dressing mix over all. Cover and cook on low for 6-7 hours. About 45 minutes before done, brown the onion and garlic in the 2 tablespoons butter. Add cream cheese, mushroom soup, mushrooms and Kitchen Bouquet; stir until smooth. Pour sauce mixture over cubed beef into crock pot and cook an additional 30-45 minutes.
