3 c flour
1 1/2 c sugar
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
4 ripe,mashed bananas
1 1/2 stick butter, melted
1/2 c cold water
2 Tbsp white vinegar
1 c mini chocolate chips
1/2 c toffee chips such as hershey's heath toffee chips

Steps:

  • 1. In an ungreased 9 X 13 pan stir together the flour, sugar, baking soda, salt and cinnamon.
  • 2. Add the bananas, melted butter, cold water and vinegar. Stir just until combined.
  • 3. Sprinkle the mini chocolate chips evenly over the top of the cake.
  • 4. Bake at 350 degrees for 30-35 minutes or until a toothpick insterted in the center comes out clean.
  • 5. Sprinkle the hot cake with the toffee chips. Cool on a wire rack. Cut into squares to serve.

My husband loves bananas and I wanted to make him a banana bread or cake. I have recipes for both and ended up taking ingredients from both to make this crazy moist cake loaded w/ mashed bananas. It's so good, I think I ended up eating most of it.!

4 large ripe bananas-mashed
1 box moist yellow cake mix
1 box small, instant banana pudding mix
1/2 c vegetable oil
1-1/2 tsp vanilla
1/2 c chopped pecnas
1/3 c packed light brown sugar
4 large eggs
2 tsp ground cinnamon
1 tsp nutmeg
1 can(s) whipped cream cheese frosting, ( or you can make your own.)

Steps:

  • 1. Heat oven to 325. Lightly spray a 10-cup bundt pan w/ cooking spray. In small bowl mix pecans, brown sugar, cinnamon and nutmeg. Set aside.
  • 2. In large bowl beat bananas, cake mix, pudding mix, oil, eggs and vanilla until combined. Sprinkle 1/2 of the cinnamon-nut mix into bottom of pan evenly.
  • 3. Pour 1/2 of the batter over the cinnamon mix. Sprinkle remaining cinnamon-nut mix over batter. Pour remaining batter over cinnamon mix. Using a butter knife, swirl the batter. bake 45-55 mins. ( my oven it took 48 mins.) Let cool. Microwave the frosting for just a few seconds to make it drizzle consistency. Drizzle frosting over the cake. You may only need 1/2 the can of frosting. Slice and serve.

1.5 cups very ripe bananas (3 fresh bananas or 4 thawed, previously frozen bananas)
2 tsp lemon juice
3 cups all-purpose flour
1.5 tsp baking soda
1/4 tsp salt
3/4 cup soft butter
2 cups sugar
3 eggs
2 tsp vanilla
1.5 cups buttermilk (OR milk soured with one tbsp vinegar or lemon juice)
1/2 cup softened butter
8 oz cream cheese, room temp.
1 tsp vanilla
3.5 cups icing sugar (also known as powdered sugar or confectioner's sugar)

Steps:

  • Pre-heat oven to 275 F, and grease and flour (or spray), a 9x13 cake pan. Mash banana and mix with lemon juice and set aside. In a med bowl, mix flour, baking soda and salt. Set aside. If you're making your own buttermilk, combine milk and vinegar (or lemon juice) in a small bowl, and set aside. In a large bowl, cream butter and sugar. Beat in eggs, one at a time. Stir in vanilla. Beat in flour mixture alternately with buttermilk. Stir in bananas. Pour into cake pan and bake 1 hour and 10 mins (or until knife comes out clean). *if need be, cook longer, checking every 10 minutes until cake is fully cooked. Immediately place in freezer for 45 minutes. (if not completely cool upon removal from freezer, let cool further before icing). Cream butter and cream cheese. Beat in vanilla and icing sugar on low until combined, then high until smooth. Frost cake and enjoy!
