- 1. Heat oven to 325. Lightly spray a 10-cup bundt pan w/ cooking spray. In small bowl mix pecans, brown sugar, cinnamon and nutmeg. Set aside.
- 2. In large bowl beat bananas, cake mix, pudding mix, oil, eggs and vanilla until combined. Sprinkle 1/2 of the cinnamon-nut mix into bottom of pan evenly.
- 3. Pour 1/2 of the batter over the cinnamon mix. Sprinkle remaining cinnamon-nut mix over batter. Pour remaining batter over cinnamon mix. Using a butter knife, swirl the batter. bake 45-55 mins. ( my oven it took 48 mins.) Let cool. Microwave the frosting for just a few seconds to make it drizzle consistency. Drizzle frosting over the cake. You may only need 1/2 the can of frosting. Slice and serve.

If you're making your own buttermilk, combine milk and vinegar (or lemon juice) in a small bowl, and set aside. In a large bowl, cream butter and sugar. Beat in eggs, one at a time. Stir in vanilla. Beat in flour mixture alternately with buttermilk. Stir in bananas. Pour into cake pan and bake 1 hour and 10 mins (or until knife comes out clean). *if need be, cook longer, checking every 10 minutes until cake is fully cooked. Immediately place in freezer for 45 minutes. (if not completely cool upon removal from freezer, let cool further before icing). Cream butter and cream cheese. Beat in vanilla and icing sugar on low until combined, then high until smooth. Frost cake and enjoy!
