Tips:

  • To ensure your biscuits have a chewy texture, make sure to use rolled oats instead of quick oats. The rolled oats will absorb more moisture and give the biscuits a softer, chewier bite.
  • Don't overmix the biscuit dough. Overmixing will result in tough, dry biscuits. Mix the dough just until the ingredients are combined, being careful not to overwork it.
  • If you don't have any coconut oil on hand, you can substitute it with unsalted butter. However, coconut oil will give your biscuits a slightly sweeter flavor and a softer texture.
  • Be generous with the white chocolate chips. The more white chocolate chips you use, the more delicious your biscuits will be. You can also add other mix-ins, such as dried cranberries, chopped nuts, or even chocolate chunks.
  • Bake the biscuits until they are golden brown around the edges. This will ensure that they are cooked through without being overcooked.

Conclusion:

Cranberry white chocolate ANZAC biscuits are a delicious and easy-to-make treat that is perfect for any occasion. They are chewy, sweet, and packed with flavor. With their combination of oats, coconut, white chocolate, and dried cranberries, these biscuits are sure to be a hit with everyone who tries them.
