1 1/4 cups fine vanilla wafer crumbs
6 tbsp. butter or margarine, melted
1 pkg. cream cheese, softened, 8 oz
1 cup whipping cream
1/4 cup sugar
1/2 tsp. vanilla
1 can whole cranberry sauce, 16 oz

Steps:

  • 1. Mix crumbs and melted butter; press firmly into bottom and sides of buttered 9 inch pie plate. Chill til firm. Meanwhile, beat cream cheese til fluffy. Mix whipping cream, sugar, and vanilla; whip til thickened but not stiff. Gradually add to the whipped cream cheese, beating til smooth and creamy.
  • 2. Set aside a few whole cranberries from sauce for garnish. Fold remaining cranberry sauce into whipped mixture. Spoon into chilled crust. Freeze firm. Remove from freezer 10 minutes before serving. To serve, top with additional whipped cream and the reserved whole cranberries. Makes 8 servings.

8 ounces cream cheese, (at room temperature)
1 cup heavy whipping cream
1/4 cup granulated white sugar
1/2 teaspoon vanilla extract
One 16-ounce can whole berry cranberry sauce

Steps:

  • In a medium bowl, combine the vanilla wafer crumbs and the butter. Press onto the bottom and sides of a 9-inch pie plate. Chill until firm.
  • In a large bowl, use an electric mixer to beat the cream cheese until fluffy.
