TURKEY AND BEEF MEATLOAF WITH CRANBERRY GLAZE

Turkey and Beef Meatloaf with Cranberry Glaze image

Turkey and cranberries is a match made in heaven -- why wait for Thanksgiving to enjoy it? This healthy take on meatloaf pairs the two in an inspired way: Turkey lightens up the traditional ground beef base and antioxidant-rich cranberries are the centerpiece of a tangy glaze.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 15

1 cup fresh or frozen cranberries, thawed
2 tablespoons ketchup
1 tablespoon honey
1 tablespoon sriracha
2 1/2 teaspoons Dijon mustard
2 sprigs fresh rosemary, leaves finely chopped (2 tablespoons), plus more sprigs for garnish
Kosher salt and freshly ground black pepper
1 small carrot
1 small onion
1 pound 90 percent lean ground beef
8 ounces 85 percent lean ground turkey
1 large egg
1/2 cup instant barley
2 teaspoons Worcestershire sauce
Freshly ground black pepper

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
  • Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
  • Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
  • Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. Brush the meatloaf on all sides with the remaining glaze and bake until a thermometer inserted into the center of the meatloaf registers 155 degrees F, 30 to 35 minutes. Garnish with rosemary sprigs before serving.

GROUND TURKEY MEATLOAF WITH CRANBERRY SAUCE

Ground Turkey Meatloaf With Cranberry Sauce image

Printed in our local newspaper. Serve with a tossed salad that includes seasonal ingredients, and baked potato for an easy fall/winter meal. A little bit different route taken from the standard ketchup-covered meatloaf recipe.

Provided by COOKGIRl

Categories     Poultry

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 13

1 1/2 lbs ground turkey
1/4 cup yellow onion, minced
1/2 cup carrot, peeled and grated
1/4 cup celery & leaves, minced
1 cup dried whole wheat bread crumbs
1/2 cup unsalted turkey stock or 1/2 cup unsalted chicken stock
1/2 teaspoon dried sage
1/2 teaspoon poultry seasoning
1 large egg, beaten lightly
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup cranberry sauce, at ROOM TEMPERATURE (canned or homemade preferably-read *NOTE)
fresh sage leaf (to garnish)

Steps:

  • *NOTE: If using canned cranberry sauce, drain first.
  • Preheat oven to 350 degrees.
  • In large bowl combine all ingredients *except* for the cranberry sauce and sage leaves. Do not overmix.
  • Lightly oil or spray a 9"x5" loaf pan. Turn the meat mixture into the prepared pan and gently pat down.
  • Bake the mixture until the loaf is firm and top is lightly browned, approximately 1 hour.
  • Remove pan from oven and spread the cranberry sauce on top of the meatloaf. Let stand in the pan for 5-10 minutes before serving.
  • Remove meatloaf from pan and transfer to serving platter. Garnish with a few sage leaves.

Tips:

  • Use fresh cranberries for the best flavor and texture.
  • If you don't have fresh cranberries, you can use frozen cranberries. Just thaw them before using.
  • Be sure to chop the celery and onion finely so that they blend well with the other ingredients.
  • Use a food processor or blender to grind the turkey and bread crumbs. This will help to ensure that the meatloaf is evenly mixed and cooked.
  • Pack the meatloaf mixture firmly into the loaf pan. This will help to prevent it from falling apart when it is cooked.
  • Bake the meatloaf for at least 1 hour, or until it is cooked through. The internal temperature of the meatloaf should reach 165 degrees Fahrenheit.
  • Let the meatloaf cool for a few minutes before slicing and serving. This will help to keep the juices in the meatloaf.

Conclusion:

Cranberry Turkey Loaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover turkey after Thanksgiving or Christmas. This meatloaf is moist and flavorful, and the cranberries add a tangy sweetness that is sure to please everyone at the table.
