1-1/2 cups chopped celery
1/2 cup chopped onion
9 tablespoons butter, divided
6 cups cubed bread
3/4 cup chopped pecans
1/3 cup orange juice
1-1/2 teaspoons grated orange zest
1 teaspoon salt, divided
6 haddock, cod or halibut fillets (6 ounces each)
ORANGE-CRANBERRY SAUCE:
1/2 cup sugar
2 teaspoons cornstarch
1/2 cup water
1/2 cup orange juice
1 cup fresh or frozen cranberries
2 teaspoons grated orange zest

Steps:

  • Preheat oven to 350°. In a large skillet over medium heat, cook and stir celery and onion in 6 tablespoons butter until tender. Stir in bread cubes, pecans, orange juice, orange zest and 1/2 teaspoon salt. Transfer to a greased 13x9-in. baking dish. Arrange fillets over stuffing. , Melt remaining butter; drizzle over fillets. 3 tablespoons olive oil
1 stalk celery, finely chopped
3 green onions, finely chopped
1 teaspoon minced garlic
1 (6 ounce) can lump crabmeat, drained
3 slices dry white bread, crusts removed and cubed
¼ teaspoon salt
¼ teaspoon ground black pepper
1 egg, beaten
½ cup grated Romano cheese
2 tablespoons lemon juice
1 tomato, seeded and diced
⅛ teaspoon ground black pepper
5 tablespoons butter, melted
6 (4 ounce) haddock fillets

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add celery, green onion and garlic, and cook and stir for a few minutes until soft. Remove from heat, and stir in the crabmeat, bread cubes, egg, Romano cheese, lemon juice, and tomato. Season with salt and 1/4 teaspoon of pepper, and mix until well blended.
  • Lay the haddock fillets in the prepared baking dish. Brush each one with melted butter. Place a heaping tablespoon of the crab mixture onto half of each fillet, and fold the other half over to cover. Secure with toothpicks if desired. Sprinkle on any remaining stuffing, and drizzle with any leftover melted butter. Cover the dish with a lid or aluminum foil. (The dish may be also made ahead of time and refrigerated at this point.)
  • Bake for 20 minutes in the preheated oven, then remove the cover and bake for an additional 10 minutes, until the top has browned and the fish flakes easily with a fork.

1 box Kraft Stove Top Stuffing (herb)
2 cups clam juice
1/2 pound med size shrimp
1/2 pound bay scallops
2 eggs
2 lb haddock
1 cup bread crumbs
8-10 slices provolone cheese

Steps:

  • Preheat oven to 350°F. Make Stove Top Stuffing as the box says but instead of adding water use clam juice. When stuffing is done stir in peeled shrimp and scallops. Cover and set aside.
  • Beat eggs and roll haddock in egg then bread crumbs. Put half of haddock in 9x13 baking dish covering the bottom. Top with stuffing and cover with provolone cheese. Put remaining haddock on top.
  • Bake for 50-60 minutes.

2 lbs haddock fillets or 2 lbs other white fish, of your choice
1 -2 lemon, juice of
butter
36 Ritz crackers (1 sleeve)
1 (6 ounce) can crabmeat
1/2 cup butter, melted

Steps:

  • Lay your fish filets out in a lg. casserole dish, or a 9x13" baking pan.
  • Squirt with fresh lemon juice, and dot with pats of butter.
  • Take the sleeve of Ritz crackers and crush finely in a bowl.
  • Add crabmeat to it, and mix well.
  • Add 1 stick of melted butter to it, and mix well.
  • Spread a 1" thick layer over your fish fillets.
  • Put in a preheated 350 oven, and bake for 20-25 mins., or until fish is no longer opague in the middle.
  • Serve with fresh lemon squirted on top.

I was given this recipe at least 30 years ago and have yet to find anyone that doesn't love it. (Providing they like seafood) I always use haddock as I'm from Maine. Fresh is expensive right now but as far as I'm concerned there's no better tasting white fish. Can use frozen haddock or another white fish . Simple to make but soooo yummy...Don't worry about the mayo..I Promise you will not taste it.

2 -3 tablespoons mayonnaise
2 lbs haddock fillets (preferably. Can use another white fish like Cod, etc.)
1/2 cup plain breadcrumbs
1 teaspoon ground sage
1 tablespoon parsley flakes
1 -2 garlic cloves, crushed or 2 -3 good pinches garlic powder
1/2 teaspoon salt (optional)
1 teaspoon Bell's seasoning
15 Ritz crackers, crushed
6 tablespoons butter, melted (can use a little more or less)

Steps:

  • Heat oven to 350 degrees.
  • Rinse and pat dry the filets.
  • Lay in single layer in baking dish.
  • Spread a thin layer of mayonnaise over fish (I put it on a little thicker. You will not taste it).
  • In small bowl, combine bread crumbs with next 5 ingredients.
  • Sprinkle evenly over fish.
  • Top with crushed Ritz Crackers.
  • Bake 5 minutes.
  • Remove from oven and pour melted butter over crackers.
  • Return to oven, bake 15 more minutes or until filets flake.

2 pounds haddock, rinsed and patted dry
1 to 2 t. lemon juice
Butter to grease baking dish
Stuffing:
1 T. butter
3 scallions, sliced
7 ounces fresh Maine crabmeat
1/2 cup fine, plain breadcrumbs
1/2 cup grated cheddar cheese
3 T. half & half
salt and pepper, to taste

Steps:

  • Preheat oven to 350 degrees. Grease 13 X 9 inch baking dish. Lay prepared fish in pan, cutting as necessary to fit, layering thinner pieces on top of one another to make a uniform thickness. Brush fish with lemon juice. Prepare Stuffing: Saute scallions in 1 T. butter in non-stick skillet over medium heat until slightly soft, but tops still bright green. Remove pan from heat; cool 2 to 3 minutes. Add rest of stuffing ingredients, tossing lightly to mix. Larger pieces of crab should still be intact. Spoon stuffing evenly over haddock. Bake at 350 degrees, or until haddock flakes. Do not over bake, as fish will be dry and tough.

  • If you don't have fresh herbs, use 1 teaspoon of dried thyme and 1/2 teaspoon of dried rosemary.
