I relied on this foolproof recipe when teaching our children to cook. Each slice is dotted with plump cranberries and flecks of orange peel.

Number Of Ingredients 17

1/3 cup packed brown sugar
3 tablespoons all-purpose flour
2 tablespoons cold butter
3/4 cup finely chopped pecans
BREAD:
2 cups all-purpose flour
3/4 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon salt
1 large egg
3/4 cup orange juice
3 tablespoons butter, melted
2 tablespoons grated orange zest
1 cup fresh or frozen cranberries
1/2 cup golden raisins

Steps:

  • In a bowl, combine brown sugar and flour. Cut in butter until crumbly. Stir in pecans; set aside. , In a large bowl, combine the flour, sugar, baking powder, nutmeg, allspice and salt. In another bowl, whisk the egg, orange juice, butter and orange zest. Stir into dry ingredients just until moistened. Fold in cranberries and raisins. , Transfer half of the batter to a greased 9x5-in. loaf pan. Sprinkle with half of the streusel; repeat layers. , Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

1/3 cup brown sugar, packed
3 tablespoons all-purpose flour
2 tablespoons unsalted butter, cold
3/4 cup pecans, finely chopped
2 cups all-purpose flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon salt
1 large egg
3/4 cup orange juice
3 tablespoons unsalted butter, melted
2 tablespoons orange zest, minced
1 1/4 cups cranberries (fresh or frozen)
2/3 cup golden raisin

Steps:

  • Preheat oven to 350 degrees F & grease a 9"x5" loaf pan.
  • FOR THE STREUSEL ~ In a bowl, combine sugar & flour, then cut in the butter until crumbly. Stir in the pecans & set aside.
  • FOR THE BREAD ~ In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, allspice & salt.
  • In another bowl, whisk together the egg, orange jice, butter & zest, then stir this mixture into the flour mixture just until moistened. Fold in the cranberries & raisins.
  • Put half of the batter into the prepared loaf pan, then sprinkle that with half of the streusel. Repeat layering.
  • Bake 65-70 minutes or until a toothpick inserted near the center comes out clean.
  • Cool in the pan on a wire rack for 10 minutes before removing the bread from the pan & putting it upright on the wire rack.

1/3 c packed brown sugar
3 Tbsp all-purpose flour
2 Tbsp cold butter

2 c all-purpose flour*
3/4 c sugar*
1 1/2 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1/4 tsp salt
1 large egg
3/4 c orange juice*
3 Tbsp butter, melted*
2 Tbsp grated orange peel
1 c fresh or frozen cranberries
1/2 c golden raisins*
MY CHANGES
*reduce nuts to 1/2 cup
*reduce all-purpose flour to 1 cup & add 1 cup whole wheat pastry flour
*reduce sugar to 2/3 cup
*reduce orange juice to 2/3 cup
*reduce butter to 2 1/2 tbs., melted
*add 1/4 cup unsweetened applesauce
*reduce golden raisins to 1/4 cup, or may leave out

  • 1. Preheat oven to 350°F. Grease a 9x5x3 inch loaf pan.
  • 2. For Streusel: In a bowl, combine brown sugar and flour. Cut in butter, until crumbly. Stir in pecans; set aside.
  • 3. For Bread: In a large bowl, combine the flour, sugar, baking powder, nutmeg, allspice, and salt. In another bowl, beat the egg, orange juice, melted butter, and orange peel. Stir into dry ingredients, just until moistened. Fold in cranberries and raisins. Transfer half of the batter to the prepared pan. Sprinkle with half of the streusel; repeat layers.
  • 4. Bake for 65-70 minutes, or until a toothpick comes out clean. Cool for 10 minutes, before removing from pan, to a wire rack. Makes 1 loaf with approximately 10 servings.

Tips:

Frozen cranberries can also be used, but they should be thawed and drained before using. - If you don't have a loaf pan, you can use a 9x13 inch baking dish.
