CRANBERRY SAUCE WITH GIN & ROSEMARY

Cranberry sauce with gin & rosemary image

Make this extra special version of cranberry sauce by adding gin and rosemary. It's the perfect sauce for your Christmas dinner table

Provided by Good Food team

Time 25m

Yield Serves 8-10

Number Of Ingredients 4

200g cranberries, fresh or frozen
100g golden caster sugar
large rosemary sprig
4 tbsp gin

Steps:

  • Tip the cranberries, sugar and rosemary into a pan with about 100ml water. Cook over a low heat for about 15 mins, stirring occasionally, until all the cranberries have burst and the sauce has thickened to a syrupy consistency. Fresh cranberries thicken the sauce more readily than frozen, so it may take a little longer, but be careful not to let the sauce become a jam.
  • Scoop out the rosemary and stir through the gin. Cook for 1 min more, then leave to cool. Will keep, covered, in the fridge for three days.

Tips:

  • To achieve the perfect balance between tart and sweet, use a combination of fresh cranberries and dried cherries. The dried cherries add a concentrated sweetness that complements the tartness of the cranberries.
  • Marsala wine adds a rich, nutty flavor to the sauce. Use a dry or semi-dry Marsala for a more subtle flavor, or a sweet Marsala for a more pronounced sweetness.
  • Fresh rosemary adds a fragrant, herbal note to the sauce. If you don't have fresh rosemary, you can use dried rosemary, but be sure to use less, as it is more concentrated.
  • For a smoother sauce, strain the cranberry mixture through a fine-mesh sieve after cooking. This will remove any remaining skins or seeds.
  • Serve the cranberry sauce warm or at room temperature. It is a delicious accompaniment to roasted turkey, chicken, or pork, and it can also be used as a topping for pancakes, waffles, or oatmeal.

Conclusion:

This cranberry sauce with cherries, Marsala wine, and rosemary is a delicious and versatile condiment that is perfect for the holiday season. With its bright red color, tart and sweet flavor, and fragrant aroma, this sauce is sure to impress your guests. Whether you serve it with roasted turkey, chicken, or pork, or use it as a topping for pancakes, waffles, or oatmeal, this sauce is sure to be a hit.
