CRANBERRY-POMEGRANATE RELISH

Cranberry-Pomegranate Relish image

This twist on the classic orange-and-walnut-studded cranberry relish has pomegranate and pistachios, which fleck the intense red berries with bits of green. You can make the cranberry mixture a day ahead, but don't add the nuts and pomegranate seeds until just before serving to preserve the crunch.

LEMONY CRANBERRY RELISH

Lemony Cranberry Relish image

Cranberry relish using a whole orange is a classic, but here, a whole lemon - pith and all - acts as the bitter, acerbic edge that your Thanksgiving plate needs. Try to find a thin-skinned lemon, which will prevent the relish from skewing too bitter. (Give it a squeeze before buying. Thin-skinned lemons will yield slightly under pressure, whereas thick-skinned lemons will feel hard.) This confetti of a condiment looks beautiful as well, almost like stained glass, with its jeweled, ruby gleam. Definitely make this the night before Thanksgiving to get it out of the way, then store it in an airtight container in the refrigerator until ready to eat.

Time 5m

Yield 2 cups

Number Of Ingredients 4

1 (12-ounce) bag fresh cranberries (3 cups)
1 lemon, preferably thin-skinned, coarsely chopped and seeded
1/2 cup/100 grams granulated sugar
Pinch of salt

Steps:

  • Rinse and drain the cranberries, then pick out and discard any squishy ones. In a food processor, pulse the cranberries, lemon, sugar and salt until finely chopped. You can serve this immediately or transfer to an airtight container and refrigerate for up to 48 hours, or until ready to serve. As it sits, the sugar will dissolve and the fruit will release liquid, creating a sweet-tart sauciness.

Tips:

  • Choose fresh and flavorful ingredients: Use ripe cranberries, pomegranates, and Meyer lemons for the best flavor.
  • Don't be afraid to experiment: You can add other fruits or spices to the relish to suit your taste.
  • Make sure to chop the fruit and vegetables finely: This will help them to blend together better and make the relish more cohesive.
  • Use a food processor or blender to make the relish: This will make the process much faster and easier.
  • Taste the relish before serving and adjust the seasonings as needed: You may want to add more sugar, vinegar, or salt to taste.

Conclusion:

Cranberry Pomegranate and Meyer Lemon Relish is a delicious and versatile condiment that can be used in a variety of ways. It is perfect for adding a pop of flavor to grilled meats, fish, or poultry. It can also be used as a topping for tacos, salads, or sandwiches. And it makes a great addition to a cheese plate or charcuterie board. So next time you're looking for a way to add some extra flavor to your meals, give this relish a try. You won't be disappointed!
