3-1/2 cups all-purpose flour
1-2/3 cups sugar
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
3/4 teaspoon salt
4 large eggs, room temperature, lightly beaten,
2 cups mashed cooked sweet potatoes
1 can (14 ounces) whole-berry cranberry sauce
2/3 cup canola oil
3/4 cup chopped pecans
Glaze:
1 cup confectioners' sugar
1/4 cup orange juice concentrate
1/8 teaspoon ground allspice

Steps:

  • In a large bowl, combine the flour, sugar, baking soda, pie spice, baking powder and salt. In another large bowl, combine the eggs, sweet potatoes, cranberry sauce and oil. 1/2 cup dried cranberries
1/2 cup all-purpose flour, divided
1 cup whole wheat flour
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon each ground cinnamon, nutmeg and allspice
1/4 teaspoon baking soda
1 can (15-3/4 ounces) sweet potatoes, drained and mashed
2 large eggs, room temperature, lightly beaten
1/4 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon orange extract

  • Toss cranberries with 1 tablespoon all-purpose flour; set aside. 1/4 c butter, melted
3/4 c mashed cooked sweet potatoes
3 large eggs, slightly beaten
1/3 c orange juice
2 1/2 c sifted all purpose flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp each ground cinnamon and nutmeg
1/8 tsp ground mace
1 c coarsely chopped fresh cranberries
1/2 c sliced natural almonds

Steps:

  • 1. Preheat oven to 350^.Grease or spray a 9x5 inch loaf pan. Set aside/ In a large bowl, combine brown sugar, butter sweet potatoes, eggs and orange juice. 1 cup fresh or frozen cranberries

1 teaspoon Dijon mustard
1/4 teaspoon pepper
2 tablespoons minced fresh chives

  • Preheat oven to 400°. Scrub sweet potatoes; pierce several times with a fork. Bake 1 hour or until tender., Meanwhile, in a small saucepan, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in cranberries, syrup, cranberry juice and 1/8 teaspoon salt. Bring to a boil. 1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter
1 egg
3/4 cup orange juice
1 tablespoon grated orange rind
1 1/2 cups chopped fresh cranberries
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Greasing 9-by-5-by-3-inch baking pan.
