¼ teaspoon poultry seasoning
½ teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon Worcestershire sauce
1 pinch cayenne pepper
1 large egg, beaten
¼ cup milk
½ cup plain bread crumbs
1 tablespoon olive oil
1 cup canned jellied cranberry sauce
½ cup orange marmalade
½ cup chicken broth
1 tablespoon minced jalapeno pepper
1 tablespoon minced Fresno pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
  • Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.

1 (12 ounce) package cranberries (fresh or frozen)
2 cups white sugar
2 oranges, juice of, freshly squeezed
2 lemons, juice of, freshly squeezed
10 whole cloves
1/4 teaspoon allspice berry
2 small cinnamon sticks
1/2 cup pineapple juice, chilled
1/2 cup ginger ale, chilled
ice cube (2 trays, as many as needed)
2 oranges, sliced
2 lemons, sliced

Steps:

  • In a large pot, combine water and cranberries.
  • Bring to a boil, reduce heat, and simmer for 30 minutes.
  • Next add the sugar, orange juice, lemon juice, cloves, allspice berries and cinnamon sticks.
  • Cover and steep for 1 hour.
  • Strain the mixture, pour into a large pitcher and allow to cool to room temperature on counter.
  • Once cooled place in refrigerator, until chilled.
  • When ready, add the pineapple juice, ginger ale, lemon and orange slices to the cranberry mixture in the pitcher and serve in tall glasses with lots of ice.

  • For the ginger syrup: Place all syrup ingredients in a saucepan and simmer until sugar dissolves and the ginger is infused in the syrup, about 20 minutes. Strain and allow to cool fully before use.

12 ounces chili sauce

  • In a large bowl, combine ground beef, cornflakes crumbs, parsley, eggs, ketchup, onion, soy sauce, garlic powder and pepper.

½ tsp (2 mL) 5-spice powder
1 large egg, beaten to mix
Salt and freshly ground pepper
Cranberry Glaze
½ tsp (2 mL) olive oil
1 clove garlic, minced
1 tsp (5 mL) chili paste
¼ tsp (1 mL) sesame oil
¾ cup (175 mL) canned jellied cranberry sauce
4 tsp (20 mL) soy sauce
1 tsp (5 mL) honey
1 tsp (5 mL) oyster sauce

Steps:

  • 1. Preheat oven to 400ºF (200ºC) and brush a baking sheet with olive oil. 2. In a medium bowl combine pork, parsley, garlic, soaked bread, 5-spice powder, egg and salt and pepper to taste. Mash together with hands to mix well. With wet hands, roll the mixture into 24 equal balls, about 1-inch (2.5-cm) each. Place meatballs on greased baking sheet and brush lightly with olive oil. Bake meatballs 15 minutes and flip them over (you may need to use a metal spatula to unstick meatballs from pan). Turn on broiler and continue cooking meatballs for 5 to 10 minutes or until crispy and cooked to desired doneness. 3. To make the cranberry glaze, heat olive oil in a small saucepan over medium-low heat. Add garlic and cook for about 5 minutes or until softened but not browned.
