Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 10

3 large eggs plus 3 egg yolks
1 cup turbinado sugar
2 cups half-and-half
1/2 cup all-purpose flour
3 tablespoons Grand Marnier or other orange-flavored brandy
1 1/2 teaspoons vanilla extract
Pinch of salt
Unsalted butter, for the baking dish
2 1/2 cups fresh or frozen cranberries, halved
Confectioners' sugar, for dusting

Steps:

  • Combine the eggs, egg yolks, 1/2 cup turbinado sugar, the half-and-half, flour, Grand Marnier, vanilla and salt in a blender. Pulse until the sugar has dissolved and the batter is smooth, about 1 minute. Let sit at room temperature, 30 minutes.
  • Meanwhile, position a rack in the upper third of the oven and preheat to 425 degrees F. Butter the bottom and side of an 11-inch ceramic tart pan or pie plate and set on a baking sheet. Toss the cranberries with 5 tablespoons turbinado sugar in a small bowl; spread in the bottom of the prepared tart pan. Bake until the mixture starts to caramelize, about 20 minutes. Remove from the oven and reduce the temperature to 375 degrees F.
  • Carefully pour 1 cup of the prepared batter into the hot pan and let sit 5 minutes, then pour in the remaining batter. Sprinkle the remaining 3 tablespoons turbinado sugar on top. Bake until puffed and almost set, about 30 minutes. Transfer to a rack and let cool 20 minutes. Dust with confectioners' sugar.

Yield Makes 6 servings

Number Of Ingredients 13

1 cup dried cranberries
1 cup tawny Port
1/3 cup rye whiskey or brandy
1/2 teaspoon cinnamon
3 large eggs
1 cup whole milk
3/4 stick unsalted butter, melted
1/2 cup sugar
1/3 cup all-purpose flour
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 teaspoon sugar mixed with
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 400°F with rack in upper third. Butter a 9-inch shallow baking dish.
  • Briskly simmer cranberries, Port, whiskey, and cinnamon in a small heavy saucepan, uncovered, stirring occasionally, until almost syrupy, 12 to 15 minutes. Pour into baking dish.
  • Blend together eggs, milk, butter, sugar, flour, vanilla, and salt in a blender and pour over cranberries, then sprinkle with cinnamon sugar. Bake until slightly puffed and set in center, about 35 minutes. Cool clafoutis briefly on a rack.

Tips:

  • Use fresh cranberries: Fresh cranberries have a tart and juicy flavor that is perfect for clafoutis. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
  • Don't overmix the batter: Overmixing the batter will make the clafoutis tough. Stir just until the ingredients are combined.
  • Bake the clafoutis in a hot oven: A hot oven will help the clafoutis to rise and set properly.
  • Let the clafoutis cool slightly before serving: This will help the clafoutis to set and make it easier to slice.
  • Serve the clafoutis with your favorite toppings: Some popular toppings include whipped cream, ice cream, and fresh fruit.

Conclusion:

Cranberry clafoutis is a delicious and easy-to-make dessert that is perfect for any occasion. With its tart and juicy cranberries, creamy custard filling, and delicate crust, this dish is sure to please everyone at your table. So next time you're looking for a special dessert, give cranberry clafoutis a try.
