1 sheet refrigerated pie crust
8 ounces cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
CRANBERRY LAYER:
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons cornstarch
1 tablespoon brown sugar
TOPPING:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
3/4 cup chopped pecans

Steps:

  • Preheat oven to 375°. Unroll the crust into a 9-in. pie plate; flute edge. In a small bowl, beat cream cheese, milk and lemon juice until smooth. Spread evenly into crust., In a small bowl, mix cranberry layer ingredients; spoon over cream cheese mixture. For topping, in another bowl, mix flour, brown sugar and cinnamon; cut in butter until crumbly. Stir in pecans. Sprinkle over cranberry layer., Bake 45-55 minutes or until crust and topping are golden brown. Cover edge loosely with foil during the last 10 minutes if needed to prevent overbrowning. Remove foil. Cool 1 hour on a wire rack; refrigerate at least 2 hours before serving.

1 10-inch unbaked deep-dish pie shell or 1 unbaked 9-inch deep dish pie pastry
1 (14 ounce) can sweetened condensed milk
4 tablespoons firmly-packed brown sugar, divided
1/4 cup cold butter
1/3 cup flour
1 (8 ounce) package cream cheese, softened
1/4 cup lemon juice
2 tablespoons cornstarch
1 (16 ounce) can whole berry cranberry sauce
3/4 cup walnuts

Steps:

  • Set oven to 425 desgrees.
  • Bake the empty pie shell for 8 minutes; remove from the oven.
  • Reduce the heat to 375 degrees.
  • In a large mixing bowl, beat the cream cheese until fluffy; gradually beat in the sweetened condensed milk until smooth.
  • Add in the lemon juice; pour into the baked pastry shell.
  • In a small bowl, combine 2 Tbsp of the brown sugar and the cornstarch, mix well (if you prefer a sweeter filling, add in more sugar).
  • Stir in the cranberry sauce; mix well.
  • Spoon evenly over the cheese mixture in the pie shell.
  • In a medium bowl, cut the cold butter into the flour, and the remaining 2 Tbsp brown sugar until crumbly.
  • Stir in the nuts.
  • Sprinkle evenly over the cranberry mixture.
  • Bake for 45-50 minutes, until golden; cool.
  • Serve at room temperature, or chill thoroughly.

1 tablespoon fat-free milk

1 pastry shell (9 inches), baked

  • Place half of the cranberries in a food processor. Cover and process until ground; set aside. In a small bowl, combine the gelatin and 1/3 cup sugar substitute. 1 1/2 c vanilla wafer crumbs- about 40 wafers
6 Tbsp melted butter
8 oz cream cheese,softened
14 oz can sweetened condensed milk
1/3 c lemon juice
1 tsp vanilla extract
1 can(s) whole berry cranberry sauce, divided (14 oz.)
garnish: whipped cream

Steps:

  • 1. Combine wafer crumbs and butter. Press firmly onto bottom and up sides of 9-inch pie plate. Chill.
  • 2. Beat cream cheese until fluffy in a large bowl. Gradually add sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Reserve 1/2 cup cranberry sauce. Add remaining sauce to cream cheese mixture. Pour into prepared crust. Cover.
  • 3. Freeze 6 hours or until firm. Just before serving, garnish with whipped cream and reserved cranberry sauce.

5 Tbsp melted butter
1 c graham cracker crumbs
1/4 c powdered sugar
1 c finely chopped walnuts
BOTTOM CHOCOLATE LAYER
1 c semi sweet chocolate chips
2/3 c heavy cream
3/4 c chopped walnuts
TOP LAYER
NOTE: I USED AN 8 INCH PYREX PIE PAN. FOR A DEEPER 9 INCH PAN. PLEASE DOUBLE THE INGREDIENTS FOR THE TOP CHOCOLATE CHEESE LAYER.
3/4 c semi sweet chocolate chips
6 oz softened cream cheese
1/4 c sugar
2 Tbsp softened butter
1 c cool whip topping
CRANBERRY TOPPING, OR SKIP AND USE CANNED CHERRY PIE FILLING
2 c fresh cranberries
1/4 c water
1/4 c orange juice
2 tsp corn starch
1/2 c sugar
1 tsp orange zest
1 Tbsp orange liquor of choice (optional)
WHIPPED CREAM OR COOL WHIP FOR GARNISH

Steps:

  • 1. Heat oven to 350 degree's. Prepare cranberry topping. In a saucepan. Place water, sugar, orange juice, orange zest,and corn starch mix well. Heat burner to high heat. Add cranberries.
  • 2. Bring to a boil. Stir and boil until cranberries burst. Reduce heat to low. Continue cooking until mixture thickens up. Remove from heat. Add liquor optional, and stir. Pour in to bowl and refrigerate.
  • 3. Make crust. In a bowl. Mix graham cracker crumbs with sugar, and melted butter. Combine really well. Stir in the walnuts and pour in to pie pan. Pat mixture in to pan and up sides bake at 350 for 10 minutes. Remove from oven.
  • 4. Make ganache. In a bowl mix chocolate chips with cream. Microwave on high 1 minute. Stop and stir. Heat again 20 seconds stop and stir. Continue doing this until chocolate is melted. Pour ganache on top of crust. Sprinkle chopped walnuts on top.Place in fridge to cool.
  • 5. When cooled. Make top layer. Melt chocolate chips in microwave. Stop and stir every 30 seconds until melted. In a bowl beat cream cheese with softened butter, and sugar until smooth. Add the melted chocolate. Beat until combined well. Fold in the cool whip, or other non dairy topping until no white shows. Pour over Ganache in pie pan. Smooth with spatula, or spoon. Refrigerate until set.
  • 6. Before serving. Top with Cranberry topping, or cold cherry pie filling. Serve with cool whip or whipped cream.

1 10 inch pie shell, (your own, or a mix)
1 8 oz cream cheese, softened
1 large egg
1/2 c icing sugar/powdered sugar
1 11 oz sweetened condensed milk
1/4 c lemon juice, fresh or bottled
2 Tbsp cornstarch
1 14 oz canned whole cranberry sauce
2/3 c all-purpose flour
1/3 c brown sugar, packed
1/4 tsp cinnamon
1/4 tsp salt
1/4 c butter, cold
1/2 c chopped pecans or walnuts, (optional)

Steps:

  • 1. CRUST: roll out pie crust to line a 10 inch pie plate, if you don't have a 10 inch, use a 9 inch pie plate...However, if you use the 9 inch pie plate, be sure to put your pie onto a cookie sheet when you put it in the oven to catch any boil-overs...
  • 2. FIRST FILLING LAYER: Beat cream cheese, egg and icing sugar/powdered sugar ... Beat...and then spread in bottom of the pie shell...
  • 3. SECOND FILLING LAYER: Stir cornstarch into cranberry sauce in small bowl...Spoon over the first filling layer...
  • 4. TOPPING: Mix flour, sugar,cinnamon and salt in a bowl...Cut in butter until mixture is crumbly...
  • 5. Stir in pecans, (or walnuts)...Sprinkle over the second filling layer... Bake in a pre-heated oven at 375 degrees for 45 - 55 minutes until set and lightly browned...(lay a piece of foil over pie if topping is getting too brown) This recipe makes 1 pie...hope you like it....
