2 tablespoons Dijon mustard
2 tablespoons honey
1 cup finely chopped fresh spinach
1/2 cup finely chopped Brie cheese
1/2 cup finely chopped walnuts
1/4 cup dried cranberries, finely chopped

1 pound Brie cheese, rind removed
1 package (17.3 ounces) frozen puff pastry, thawed
2/3 cup whole-berry cranberry sauce
1 large egg
1 tablespoon water
1/2 cup chopped pecans

Steps:

  • Preheat oven to 400°. Beat trimmed Brie on medium until smooth and creamy, about 5 minutes., On a lightly floured surface, unfold 1 sheet puff pastry; spread half the Brie to within 1/2 in. of edges. Spread half the cranberry sauce over Brie. Starting with a short side, roll up jelly-roll style. Cut crosswise into 12 slices. Place pastries on parchment-lined baking sheets. Whisk egg with water; brush over slices. Sprinkle with chopped pecans. Repeat with remaining puff pastry. Bake until golden brown, 15-20 minutes.

1 medium Brie cheese round (5 to 6 inches)
1/2 cup cranberry juice
1 tablespoon brown sugar
1/2 cup whole dried cranberries
1/2 cup toasted pecans, chopped
2 tablespoons honey
1/4 teaspoon ground cinnamon
One 17-ounce box frozen puff pastry (2 sheets), thawed
1 large egg, lightly beaten
Crackers, for serving

Steps:

  • Put the cheese in the freezer for 10 to 15 minutes to chill.
  • Bring the cranberry juice and brown sugar to a boil in a small saucepan and add the cranberries. Turn off the heat and let the cranberries plump for about 10 minutes. Transfer them with a slotted spoon to a bowl, add the pecans, honey and cinnamon and mix together.
