  • Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. 1 bay leaf
1 cube vegetable bouillon cube, divided
2 tablespoons olive oil
1 medium yellow onion, diced
½ cup diced bell pepper
1 cup tomato sauce
3 tablespoons tomato paste
1 ½ tablespoons white sugar
1 tablespoon Dijon mustard
1 teaspoon apple cider vinegar
1 teaspoon chipotle flakes
½ teaspoon smoked paprika

Steps:

  • Cover beans with water in a large pot and allow to soak for 6 to 8 hours. Drain and rinse under cold running water.
  • Cover soaked beans with fresh water about 3 inches above the top of the beans and bring to a boil over medium-high heat. Add bay leaf and 1/2 of the bouillon cube. Reduce heat and simmer until beans are al dente, about 45 minutes.

PRESSURE COOKER THE CRANBERRY BEANS
3 c dry cranberry beans
7 c water
place beans and water in pressure cooker and pressure at 2nd ring for 45 minutes.
SAUTE IN A PAN
1 lb bacon, chopped
1 medium onion, diced
add the bacon & cook till crisp. add onion and sauté until tender.
IN CROCKPOT OR PAN
1 1/2 c pineapple pieces
3 1/2 c ketchup
1/2 c molasses
1/2 c brown sugar
1/4 c worcestershire sauce
2 Tbsp frank's hot sauce
1 1/2 Tbsp dry mustard
1 Tbsp dry curry powder
1 tsp salt
add water if beans are too thick.

Steps:

  • 1. Rinse off your cranberry beans and sort through them. Soak them in water overnight, rinse & drain or pressure cook them for 45 minutes or until tender.
  • 2. Gather all the additional ingredients to add to the crock pot with the beans.
  • 3. Add beans and all ingredients except the onions & bacon. Cook on a medium heat for 3 1/2 hours. Add your sautéed onions and bacon after 1 1/2 hours. Stir beans occasionally.
  • 4. Check beans at 3 hours to see if they are done. Cook them longer if necessary.
  • 5. 8-21-13 --- Today I added grilled & chopped all beef angus hot dogs to the beans and topped it with cheddar cheese. It was my dinner tonight.

2 Turkish bay leaves or 1 California
3 large fresh thyme sprigs
3 large fresh savory sprigs
3 large fresh parsley sprigs

1 onion, quartered
1 small (2-inch) dried hot chile such as árbol, cayenne,or Thai
2 pounds shelled fresh cranberry beans (3 1/2 pounds in shells); or 1 lb dried beans (such as borlotti, cannellini, or giant lima beans) soaked in water overnight
1 tablespoon kosher salt plus additional to taste
1/4 cup extra-virgin olive oil
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh thyme or savory

Steps:

  • Wash leek greens well in a bowl of cold water, then lift out and drain well. Tuck bay leaves and herb sprigs into leek greens and tie tightly in a bundle with string to make a bouquet garni.
  • Bring water, bouquet garni, onion, and chile to a boil in a 5-quart heavy pot and simmer, partially covered, 20 minutes. Add beans and simmer gently, stirring occasionally and adding 1 tablespoon kosher salt toward end of cooking, until tender, about 25 minutes for fresh beans or 50 minutes to 1 1/4 hours for soaked dried. 3/4 cup bread crumbs
3 eggs, lightly beaten

1/2 cup chicken broth (just enough to moisten)
1/2 pound green beans
1/2 pound yellow wax beans
1/4 cup walnut oil

2 large sweet potatoes, peeled and sliced 1/8-inch thick
1 cup milk
1 cup heavy cream
1 tablespoon salt

1/4 teaspoon white pepper
1 pinch nutmeg
1 tablespoon chopped rosemary

Steps:

  • Preheat oven to 350 degrees. For the glaze, spread the brown sugar over the bottom of a greased loaf pan and spread the cranberry sauce over the sugar. In a large bowl mix all the remaining ingredients until well incorporated. Form the meat mixture into the loaf pan, laying out over the cranberry glaze. Bake in 350 degree oven for 1 hour, (be sure to assemble and cook the potato gratin along with the meatloaf, as they have the same cooking times). Turn out the loaf and set aside.
  • Blanch beans in boiling, salted water for 1 minute and then shock in an ice water bath. When ready for dinner, toss the beans with walnut oil, salt and pepper and slivered almonds and place on a baking sheet and place in the oven with the meatloaf for the last 10 minutes before the meatloaf comes out.;
  • Preheat oven to 400 degrees. Season potatoes with salt and pepper and layer in buttered 2 inch deep baking pan. Bring the rest of the ingredients to a boil and pour over the potatoes while hot, until potatoes are almost covered. Bake at 400 degrees until tender, about one hour.
  • To assemble the dish, slice the meatloaf into 1 1/2-inch thick slices, and plate with a nice square of the potato gratin, and the beans along side. Serve everything warm.

1 sweet onion, sliced (such as Walla Walla, Vidalia, etc.)

1 orange, juice and zest of, medium
2 tablespoons aged balsamic vinegar
3 tablespoons tangerine- pomegranate juice (such as PomWonderful, or a blend of cranberry and orange juices, read *NOTE)

  • *NOTE: I used 1 tablespoon freshly squeezed tangerine juice, 1 tablespoon pomegranate syrup and 1 teaspoon sugar in place of the PomWonderful.
  • In a pot, steam green beans until fork-tender, 5 minutes for small green beans but as long as 15 minutes for larger green beans.
