APRICOT ALMOND TRUFFLES

This supposed to be a healthy alternative to traditional candy. This recipe uses dried apricots which are high in fiber. Almonds have many health benefits and the dark chocolate has antioxidants. So this is not candy at all - it's healthfood! Recipe adapted from Ellie Krieger.

Tips:

  • Use a food processor to quickly and easily chop the dried cranberries and apricots. This will save you time and energy.
  • If you don't have a food processor, you can chop the cranberries and apricots by hand using a sharp knife. Be sure to chop them finely so that they will blend well with the other ingredients.
  • Make sure the cream cheese is softened before you start making the truffles. This will make it easier to mix with the other ingredients and will help to prevent the truffles from becoming crumbly.
  • If you don't have time to make the truffles ahead of time, you can store them in the freezer for up to 2 weeks. Be sure to thaw them in the refrigerator before serving.
  • To make the truffles even more special, you can decorate them with melted chocolate, sprinkles, or nuts.
