Yield Makes 2 cups

Number Of Ingredients 10

2 cups fresh or defrosted frozen cranberries
1/4 cup diced red onion
1 large jalapeno pepper, seeded and finely chopped
2 tablespoons fresh lime juice
2 blood oranges, or navel oranges, peeled, sectioned, and cut into 1/4-inch pieces, juices reserved
2 teaspoons freshly grated ginger
1/2 cup sugar
2 stalks celery, peeled to remove strings, cut in 1/4-inch dice
1/4 cup fresh mint leaves, coarsely chopped
1/4 cup pecans, toasted, broken in pieces

Steps:

  • Place cranberries in food processor, and pulse to chop coarsely, about five pulses. Transfer to a medium bowl.
  • Add onion, jalapeno, lime juice, orange sections and juice, ginger, sugar, and celery; mix gently. Refrigerate for at least 1 hour and up to 2 days. Just before serving, add mint and pecans, and toss to combine.

Tips:

  • Choose fresh, ripe cranberries. Look for cranberries that are plump and firm, with a deep red color. Avoid cranberries that are bruised or have soft spots.
  • Wash the cranberries thoroughly before using. This will remove any dirt or debris.
  • Use a sharp knife to chop the celery. This will help to prevent the celery from becoming stringy.
  • Add the cranberries and celery to a food processor or blender and pulse until finely chopped. You can also chop the cranberries and celery by hand, but this will take longer.
  • Stir in the sugar, vinegar, and spices. Taste the relish and adjust the seasonings to your liking.
  • Let the relish chill for at least 30 minutes before serving. This will allow the flavors to meld.

Conclusion:

Cranberry and celery relish is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for Thanksgiving dinner, but it can also be enjoyed year-round.
