Steps:

  • For the crust: Preheat the oven to 325 degrees F. Line muffin pans with 36 muffin liners. Combine the graham cracker crumbs, granulated sugar and butter in a bowl. 2 tablespoons minute tapioca
1/4 cup granulated sugar
9 graham crackers, crushed
1/4 cup butter, melted

1/2 pint heavy whipping cream

Steps:

  • Combine strawberries, tapioca and 1/4 cup granulated sugar in 2 quart saucepan.
  • Cook on medium heat, stirring constantly until mixture thickens.

PIE CRUST
1 1/2 c graham cracker crumbs
1/2 c melted butter
1/8 c water
PIE FILLING
3-4 c fresh or frozen blueberries (without syrup)
7 Tbsp cornstarch
3 Tbsp water
4 Tbsp lemon juice
1/2 tsp cinnamon
1/4 tsp allspice
2/3 c sugar
TOPPING
1/4 c sugar
1/2 c flour
1/4 c butter (softened)

Steps:

  • 1. Pre-heat oven to 375.
  • 2. Graham Cracker Crust: Combine graham cracker crumbs, one stick of butter and water. Press into pie plate and refrigerate for 1 hour (to prevent crumbling when serving)
  • 3. Rinse blueberries. Pick out and remove any bits of stems, leaves and soft or mushy berries. It is easiest to do this in a large bowl of water and gently run your hands through the berries as they float. With your fingers slightly apart, you will easily feel any soft or mushy berries get caught in your fingers.
  • 4. Combine the 2/3 cup sugar, 7 Tablespoons of corn starch in a bowl and mix well! stir in either 1/2 teaspoon of cinnamon and/or 1/4 teaspoon of allspice, mixed in (optional)
  • 5. Add the 2 Tablespoons of lemon juice, and 3 Tablespoons of water (or grape juice) and stir it up.
  • 6. Pour blueberries into pie crust. There's lots of air space and it will cook down, so don't worry if they mound up about an inch (2.5 cm) above the edge of the plate.
  • 7. pour the mixture of sugar, juice, etc. into the pie all over the blueberries. If it is a gloppy liquid, don't worry, just pour it somewhat evenly over the top. But it doesn't take perfection; it will smooth itself out in the oven.
  • 8. Crumb Topping: 1/4 cup sugar 1/2 cup flour 1/4 cup butter Mix together in a small bowl and sprinkle it over the pie.
  • 9. Bake 375F for 1 hour or until golden brown and filling is bubbly. Will keep 1 week in the frige (if it lasts that long)

60 butter crackers, such as Ritz Crackers (about 2 sleeves)

1 large egg white
One 14-ounce can sweetened condensed milk
2/3 cup fresh Key lime or lime juice (from about 6 to 8 limes), plus 1/2 Key lime or lime for garnish
Pinch kosher salt
4 large egg yolks

Steps:

  • For the crust: Adjust an oven rack to the middle position and preheat the oven to 350 degrees F. Butter a 9-inch pie plate. Put the crackers in a food processor and pulse until they form fine crumbs. Add the butter, sugar and egg white and pulse until the mixture comes together like wet sand (it should hold together when pinched). Transfer to the prepared pie plate and press evenly into the bottom and up the sides. Bake until lightly golden, about 10 minutes. Let cool completely.
  • For the filling: Whisk together the condensed milk, lime juice, salt and egg yolks in a medium bowl.   • Prepare the garnish: Use a citrus zester to make strips of zest. Then cut away all of the peel and white pith (save the other half for another use). Cut the lime "meat" into small chunks.
  • Fill a piping bag fitted with a star tip with whipped cream. Pipe mounds of whipped cream around the edges of the pie and decorate with chunks of lime and zest. Serve immediately or return to the refrigerator to chill until serving.

3 egg yolks
1/2 c real lemon or you can fresh squeez which makes a real rich more tart taste
MERINGUE
4 egg whites
6 Tbsp sugar
1 tsp real lemon juice or valilla flavoring best with lemon for this pie
RITZ CRACKER CRUST
2 about 2 sleeves of crackers
1 stick butter

  • 1. First melt the butter and crush the crackers and then blend with the butter.
  • 2. In a 10" pie pan press the mixture down and around firmly. SET ASIDE
  • 3. In a mixing bowl pour in the milk, 3 egg yolks, and the lemon juice. With a hand whisk,whip all till well combined and egg yolks fully incorporated. Pour in the prepared pie shell.
  • 4. Now with a hand mixer Add the egg whites in a mixing bowl make sure no yellow is in your whites or they will not set. Begin whipping untill frothy.
  • 5. Add in the flavoring lemon or vanilla, whip about a minute to incorporate.
  • 6. Very important step for those that have never made a meringue. Add one tablespoon of sugar slowly at a time while beating the egg whites. After all 6Tbls have been added continue to whip until it forms peaks.
  • 7. Top the pie with the meringue and swirl to make a solf fluffy topping. Bake on 350 dgrees about 10 minutes watching to see the meringue is lightly browned not burned.
  • 8. Remove from oven and let cool about an hour then refrigerate let set serve cold and keep refrigerated until gone.

CRUST:
15 whole graham crackers
1/3 cup granulated sugar
8 tablespoons unsalted butter, melted
FILLING:
8 tablespoons unsalted butter
4 ounces semisweet baking chocolate, chopped
1 tablespoon all purpose flour
1 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
3 large eggs plus 1 large egg white
1 cup Reese's Peanut Butter Cups, chopped (I used minis, but any size is fine, just chop them), optional (see note)
CHOCOLATE WHIPPED CREAM:
1 cup heavy whipping cream
1 teaspoon vanilla
2 tablespoons powdered sugar
1 tablespoon unsweetened cocoa powder

Steps:

  • Note on the pie: if you're using a 9" standard pie plate it will be a very full pie. Bake it on a cookie sheet just in case, but it should not spill over. You can use up to a 10" pie plate, but do not use anything smaller than 9". If you have a 9" deep dish pie plate, you can use that as well. CRUST: Preheat oven to 350°F. Grind the graham crackers in a food processor until they are a fine crumb. (You can also place them in a large gallon size ziploc bag and roll them with a rolling pin.) Place in a bowl and stir in sugar and melted butter with a fork. Press into the bottom and up the sides of a 9-10" or 9" deep dish pie plate. Bake until firm, about 10 minutes. FILLING: Melt the butter with chocolate in a medium sized bowl. I did this in the microwave, heating on high in 30 second increments, stirring between each, until the chocolate is melted and smooth. (You can also do it in a bowl set over a pan of simmering water.) Once the chocolate is melted and smooth, whisk in the flour, sugar, vanilla, and salt. Whisk in eggs and egg white, one at a time, until the mixture is smooth. Stir in the chopped peanut butter cups, if using. Pour mixture into prepared crust. Bake until the top is puffed and filling is set in the center, 35 to 45 minutes. Let cool, serve at room temperature. While the pie is baking, make the chocolate whipped cream. Start with cold bowl and beaters. Place the whipping cream in a bowl and beat on high until the mixture thickens. Slowly add the powdered sugar, vanilla and unsweetened cocoa powder. Continue beating until stiff peaks form. Be careful to not over beat. Best served on day it's made. Top with whipped cream or ice cream. (Note that I get pretty slices because I chill my pies a few hours before cutting. That's the secret to perfect slices!) NOTES: I added the peanut butter cups because I love the combination of PB and chocolate. If you don't like peanut butter or are allergic, just skip them. The pie will cook just fine without them! You can also add in some of your favorite chopped candy in it's place.

3 tablespoons cornstarch
1/8 teaspoon salt
1/4 cup water
4 cups fresh blueberries, divided
