SEAFOOD ENCHILADAS
These crab and shrimp stuffed enchiladas taste like the ones served at a popular Mexican restaurant in my area. My husband just loves them. After sprinkling the cheese over the enchiladas before baking, you can also garnish with tomatoes, cilantro, olive slices, or whatever other garnish you enjoy.

This is so good. A different twist on enchiladas. It has been around my house for a long time. It is adapted from a recipe in a 1979 edition of Seasoned with Sun.

SPINACH AND MUSHROOM ENCHILADAS WITH CILANTRO CREAM SAUCE
I LOVE these spinach enchiladas. They are just like the ones served at one of my fave restaurants! If you like spinach, you will love these. If you don't like spinach- you will probably find that this recipe changes your mind. (Altered recipe after reviews regarding the saltiness and amount of sauce. I have not had that problem, but do not want anyone to have a bad result. Please do try this and enjoy it.)

Tips:
- Prep before cooking: Before starting to cook, take a few minutes to prep all your ingredients. Chop the vegetables, measure out the spices, and gather the necessary utensils. This will make the cooking process smoother and more enjoyable.
- Choose fresh and high-quality ingredients: The quality of your ingredients will greatly impact the taste of your enchiladas. Opt for fresh, ripe vegetables, tender crab meat, and flavorful mushrooms.
- Don't overcook the crab and mushrooms: Crab and mushrooms cook quickly, so be careful not to overcook them. Overcooked crab becomes tough and chewy, while overcooked mushrooms lose their delicate flavor and texture.
- Use a flavorful enchilada sauce: The enchilada sauce is a key component of this dish, so make sure it's packed with flavor. You can use a store-bought enchilada sauce or make your own using a blend of tomatoes, chili peppers, and spices.
- Add cheese for a gooey and flavorful filling: Cheese is a classic addition to enchiladas, and it helps to create a gooey, flavorful filling. Use a Mexican cheese blend or a combination of your favorite cheeses, such as cheddar, Monterey Jack, and queso fresco.
- Bake the enchiladas until golden brown: Bake the enchiladas in a preheated oven until they are golden brown and bubbly. This usually takes about 20-25 minutes.
Conclusion:
Crab and mushroom enchiladas are a delicious and satisfying dish that is perfect for a special occasion or a weeknight meal. With their tender crab meat, flavorful mushrooms, and gooey cheese filling, these enchiladas are sure to be a hit with everyone at the table. So next time you're looking for a unique and flavorful enchilada recipe, give these crab and mushroom enchiladas a try.
