2 cloves garlic, chopped
1 onion, chopped
2 (14.5 ounce) cans peeled and diced tomatoes, drained
4 medium baking potatoes, peeled and diced
2 (15 ounce) cans pinto beans, with liquid
2 (15.2 ounce) cans whole kernel corn, with liquid
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
1 (10 ounce) package frozen mixed vegetables
4 cups water
2 teaspoons ground cumin
2 teaspoons chili powder
salt and pepper to taste

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
  • Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. They add a lot of the flavor to this recipe so try not to substitute them if possible.

1/2 bacon, diced
2 pounds cubed beef stew meat
3 large onions, medium dice
1 bunch celery, well scrubbed, cleaned, and chopped
1 pound carrots, medium dice
One 750-ml bottle red wine
2 quarts beef broth
1 cup all-purpose flour
1/2 cup vegetable oil
2 pounds potatoes, well scrubbed and diced, skin on
One 8-ounce package frozen okra
3 bay leaves
Salt and freshly ground black pepper

Steps:

  • Brown bacon in a large (8-quart capacity) pot. Add beef and brown in the bacon fat. Add onions, celery and carrots and saute for about 5 minutes. Add red wine and beef broth, and simmer until reduced by half. In a small bowl, mix flour and oil, then stir this mixture into the stew and let simmer for a few minutes to thicken and integrate flavors. Add potatoes, okra and bay leaves to the stew and let cook until potatoes are fork tender. Season, to taste, with salt and pepper.

2 Tbsp oil
1/2 lb dried white beans, navy or great northern
7 c water
1 can(s) 1ld.can of crushed or stewed tomatoes, undrained
1 c onion, chopped
1 c celery, diced
1 c turnips, diced (optinal)
1 c potatoes
3 cubes beef bullion or 1 can beef broth
1 tsp salt
1/2 tsp pepper

2 Tbsp worcestershire sauce
dash of tabasco according to your taste

  • 1. Brown the steak in the oil in a skillet. Wash the dried beans. Place the steak, beans, water and all of the other ingredients in the slow cooker and stir together. Cook on low for 7-8 hours. Taste for seasoning, it might need a tad more salt.
  • 2. If you are going to bake it in the oven, mix it all together in an ovenproof Dutch oven on the stove top and bring to a boil. Cover and place in the oven at 325 degrees for 4 hours.

1 can(s) corn, drained

1 c water
sliced jalapeno peppers for garnish (optional)

Steps:

  • 1. Make sure that your crockpot is at least 5qts.
  • 2. Brown the hamburger with the chopped garlic cloves on the stove top. Drain the fat. Let sit in the pan for a bit to cool.
  • 3. Open all of you cans, and dump them into the crockpot. Drain the corn and the potatoes, but add the rest of the can liquid to the crockpot.
  • 4. After adding all of the can contents, add the browned meat and a cup of water. Stir with a spoon to mix a bit.
  • 5. Cover and cook on low for 8-10 hours, or on high for 4-5. Soup and stew tastes better the longer you cook it, so opt for the longer cooking time if you can.
  • 6. Garnish with sliced jalapeno peppers, if desired.

1 lb potato (yukon gold, cut into 2-inch chunks)
6 carrots, peeled, cut into 2 inch chunks
3 stalks celery
3 tablespoons flour
1 tablespoon cold water
salt, to taste

Steps:

  • In a large pot heat oil over medium high heat. In a sealable plastic bag mix together the flour, onion powder, garlic powder, salt and pepper. Add a small handful of meat at a time and shake until well coated. Brown meat in hot oil, in batches about 1 minute per side. Remove meat and reduce heat to medium and add onions. Brown onions, about 3 min total, then remove from pan and set aside. Drain excess fat from pan.
  • Add browned meat, bay leaf, chipolte pepper, onion soup and beef broth to the pot. Stir and bring to a boil. Reduce heat to low, cover and simmer 1 hour, stirring occasionally. Add liquid smoke, potatoes, carrots, browned onions, and celery; cook for 30 minute (If you want a thicker stew about 30 minutes before the stew is done stir the flour and water together until smooth- add to pot) Season finished stew with salt and pepper to taste.
