SOUTHERN COUNTRY CORNBREAD

Southern Country Cornbread image

Watching my grandpa make cornbread over the years I am now soo sad I never asked him for the recipe, that and his biscuits are now lost forever, I am trying to recreate them and this is the closest I've come to the cornbread. Though it is nowhere near what he made. It is a tweaking of several recipes and of what I remember, and do not add sugar!! I will cry if anyone does!!

Yield 1 pan, 5-8 serving(s)

Number Of Ingredients 8

3 tablespoons shortening (I use crisco butter flavor, or bacon drippings are awesome, too!)
1 cup cornmeal
1/2 cup flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 425°.
  • Put the shortening in a cast-iron skillet and place in the oven till melted.
  • Combine the cornmeal and flour. In seperate bowl whisk eggs until foamy then whisk in buttermilk. Add the rest of the dry ingredients to the cornmeal mixture.
  • Combine wet and dry ingredients. Mix should be pourable. Take the hot skillet from the oven, pour the batter into the hot pan directly onto the melted hot shortening, this is what makes it sooo yummy!.
  • Place back in the oven and bake for 20 to 25 minutes, until golden brown or when knife inserted in center comes out clean.

COUNTRY KITCHEN CORNBREAD

This is a mildly sweet, buttery cornbread...quite old-fashioned except for the use of sour cream. However, the sour cream imparts a moistness and delicious flavor.

Time 45m

Number Of Ingredients 9

1 c cornmeal
1 c flour
1/3 c sugar
1 Tbsp baking powder
1/3 tsp salt
3/4 c milk
1/2 c sour cream
2 eggs
6 Tbsp melted butter (3/4 stick)

Steps:

  • 1. In a bowl, stir together first 5 ingredients until blended.
  • 2. In another bowl, beat together remaining ingredients until blended.
  • 3. Add the dry ingredients and stir until mixture is blended. Do not overmix.
  • 4. Spread batter into a greased 9x9-inch pan and bake in a 350° oven for 25 to 30 minutes or until top is golden brown and a cake tester, inserted in center, comes out clean.
  • 5. Cut into squares and serve warm.

Tips:

  • Use fresh cornmeal. Fresh cornmeal has a sweeter, more flavorful taste than store-bought cornmeal. If you can, grind your own cornmeal from dried corn kernels.
  • Don't overmix the batter. Overmixing the batter will make the cornbread tough. Mix just until the ingredients are combined.
  • Bake the cornbread in a hot oven. A hot oven will help the cornbread rise and brown properly. Preheat the oven to 400 degrees Fahrenheit before baking the cornbread.
  • Let the cornbread cool slightly before serving. This will help the cornbread hold its shape and prevent it from crumbling.

Conclusion:

Country kitchen cornbread is a delicious and versatile side dish that can be served with a variety of meals. It's easy to make and can be tailored to your own taste preferences. Whether you like it sweet or savory, moist or crumbly, there's a country kitchen cornbread recipe out there for you.
