1/2 tsp salt
1 c dried peaches, chopped
1/4 c fresh orange juice
1 green onion, sliced
2 Tbsp fresh ginger, grated
2 Tbsp brown sugar
2 Tbsp fresh lime juice
1 Tbsp soy sauce
1 Tbsp vegetable oil

Steps:

  • 1. Place hens, skin side up, in a 13 x 9 x 2 inch baking dish. Sprinkle with salt; broil 6 inches from the heat 3 to 5 minutes or until the skin is lightly browned. Remove from the oven.
  • 2. Combine peaches and remaining ingredients in a small saucepan. Cook over medium heat 5 minutes, stirring occasionally.
  • 3. Pour sauce over the hens. Bake uncovered, at 375° for 30 minutes or until done.

Tips:

  • Brining the hens: Soaking the hens in a brine solution before cooking helps to enhance their flavor and keep them moist. You can use a simple brine made with water, salt, and sugar, or you can add herbs, spices, and other flavorings to the brine.
  • Using a flavorful glaze: The peach glaze is a key component of this recipe, and it adds a delicious sweet and tangy flavor to the hens. Be sure to brush the hens with the glaze liberally before and during cooking to ensure that they are evenly coated.
  • Cooking the hens to the proper temperature: It is important to cook the hens to the proper internal temperature of 165 degrees Fahrenheit to ensure that they are safe to eat. You can use a meat thermometer to check the internal temperature of the hens.
  • Letting the hens rest before carving: After cooking the hens, it is important to let them rest for a few minutes before carving. This allows the juices to redistribute throughout the hens, resulting in more tender and flavorful meat.

Conclusion:

This recipe for Cornish game hens with peach glaze is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight dinner. The hens are brined and then roasted until tender and juicy, and the peach glaze adds a delicious sweet and tangy flavor. This recipe is sure to be a hit with your family and friends.
