CORNBREAD - DAIRY FREE

This is a sweet cornbread.

Categories     Sweet Breads

Time 35m

Number Of Ingredients 9

2 c all purpose flour
1 1/4 c yellow cornmeal
3/4 c white cornmeal (if you don't have white you can use all yellow)
1 1/3 c sugar
2 tsp salt
6 tsp baking powder
2 eggs
2 c flax, almond, or soy milk. i use flax milk from sprouts. you can find it by the almond milk.
2/3 c vegetable oil

Steps:

  • 1. Put all the dry ingredients in a large bowl. Stir the dry ingredients around to mix them together.
  • 2. In a medium size bowl, mix all of the wet ingredients. Once you have stirred and mixed the wet ingredients you can now add them to your dry ingredients until combined.
  • 3. I use a large ungreased glass casserole dish about 9 x 13. Put it an oven at 400 degrees on the middle rack. Just make sure you have about 2 inches on the sides of the dish as it will rise quite a bit. Or you could try to divide into two 8x8 dishes. Cook between 20-30 minutes. Test it with a toothpick in several places in the middle. If it comes out clean you should be good. My oven took me about 30 minutes. But it will depend on what size dish you use and your oven. But start checking around 20 min. I found using the convection made it brown faster than it was actually cooking it. Serve with honey butter and chili. So yummy!

Tips:

  • Choose the right cornmeal: Use a coarse cornmeal for a grittier texture or a fine cornmeal for a smoother texture. The meal made from white corn has a mild flavor, while the meal made from yellow corn has a sweeter flavor.
  • Use buttermilk instead of dairy milk: Buttermilk is a great dairy-free substitute for milk in cornbread. It adds a tangy flavor and helps to make the cornbread moist. You can make your own buttermilk by adding 1 tablespoon of lemon juice or vinegar to 1 cup of unsweetened plant-based milk. Let it sit for 5 minutes before using.
  • Add some sweetness: If you like your cornbread on the sweeter side, you can add some sugar, honey, or maple syrup to the batter. Although the original recipe uses honey for adding a bit of sweetness, if you are vegan, you can use maple syrup instead.
  • Don't overmix the batter: Overmixing the batter will result in a tough, dense cornbread. Mix the ingredients just until they are combined.
  • Bake the cornbread in a hot oven: A hot oven will help the cornbread to rise quickly and develop a crispy crust.
  • Let the cornbread cool before slicing: If you slice the cornbread while it's still hot, it will crumble. Let it cool for at least 10 minutes before slicing and serving.

Conclusion:

Cornbread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. It's also a great side dish for soups, stews, and chili. With so many different ways to make cornbread, there's sure to be a recipe that you'll love. So next time you're looking for a delicious and easy-to-make bread, give cornbread a try.
