She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. I cook it until it's crisp almost all the way through. It's delicious hot, warm or cold. -Tina Quiggle, LaGrange, Georgia

Tips:

  • Use fresh cornmeal. Fresh cornmeal will give your corn pone a better flavor and texture than old cornmeal.
  • Season the cornmeal well. Cornmeal is a bland ingredient, so it's important to season it well with salt, pepper, and other spices. You can also add herbs, cheese, or vegetables to your corn pone for extra flavor.
  • Don't overmix the batter. Overmixing the batter will make your corn pone tough. Just mix until the ingredients are combined.
  • Cook the corn pone in a hot skillet. A hot skillet will help to create a crispy crust on the outside of the corn pone.
  • Serve the corn pone hot. Corn pone is best served hot out of the skillet. You can top it with butter, honey, or syrup.

Conclusion:

Corn pone is a delicious and versatile Southern dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to your own taste. So next time you're looking for a hearty and satisfying meal, give corn pone a try.
