Categories     Condiment/Spread     Food Processor     Herb     Tomato     Vegetable     No-Cook     Cocktail Party     Super Bowl     Vegetarian     Quick & Easy     Cream Cheese     Bell Pepper     Cilantro     Gourmet

Yield Makes about 2 1/3 cups

Number Of Ingredients 10

two 7-ounce jars roasted red peppers, drained
3 ounces sun-dried tomatoes (not packed in oil, about 30), soaked in hot water for 5 minutes and drained well, reserving 3 tablespoons of the soaking liquid
2 garlic cloves, chopped fine
1 1/2 teaspoons ground cumin
1 to 2 bottled pickled jalapeño chiles, seeded and minced (wear rubber gloves)
1 teaspoon fresh lemon juice
1/4 cup chopped fresh coriander
1/4 cup chopped scallion
4 ounces cream cheese, cut into bits and softened
tortilla chips as an accompaniment

Steps:

  • In a food processor purée the red peppers, the tomatoes, the garlic, the cumin, the jalapeños, the lemon juice, the coriander, and the scallion until the mixture is smooth, add the cream cheese and salt to taste, and purée the mixture, adding enough of the reserved tomato-soaking liquid to thin the dip to the desired consistency and scraping down the side of the bowl occasionally, until it is smooth. Transfer the dip to a serving bowl and serve it with the tortilla chips.

CORIANDER CURRY DIP

Categories     Condiment/Spread     Blender     Garlic     Appetizer     Quick & Easy     Cream Cheese     Curry     Chill     Cilantro     Gourmet

Yield Makes 8 Servings

Number Of Ingredients 9

1/2 teaspoon unflavored gelatin
a 10 1/2-ounce can beef consommé (not beef broth)
1 pound cream cheese, softened
2 teaspoons curry powder
2 teaspoons chopped garlic
1 1/2 cups packed fresh coriander sprigs
Accompaniments:
breadsticks
crudités

Steps:

  • In a small heatproof bowl sprinkle gelatin over 1/4 cup consommé to soften 1 minute.
  • In a small saucepan bring remaining consommé just to a boil and remove pan from heat. Stir hot consommé into gelatin mixture, continuing to stir until mixture is dissolved completely, and cool.
  • In a blender combine cream cheese, consommé mixture, curry powder, and garlic and blend 30 seconds. Pour dip through a fine sieve into a medium serving bowl. Chop coriander and stir into dip. Chill dip, covered, 6 hours, or until thickened (dip will not set firm).
  • Serve dip with breadsticks and crudités.

Tips:

  • For the best flavor, use fresh coriander leaves. If you don't have fresh coriander, you can use dried coriander, but it will be less flavorful.
  • If you don't have plain yogurt, you can use Greek yogurt or sour cream. However, Greek yogurt and sour cream are thicker than plain yogurt, so you may need to add a little bit of milk or water to thin it out.
  • If you don't have tahini, you can use another nut or seed butter, such as almond butter or sunflower seed butter. However, tahini has a unique flavor that is difficult to replicate with other nut or seed butters.
  • If you don't have lemon juice, you can use lime juice or white vinegar. However, lemon juice has a brighter flavor than lime juice or vinegar, so it is the best choice if you want a tangy dip.
  • If you want a spicier dip, you can add a pinch of cayenne pepper or chili powder. You can also add some chopped jalapenos or serrano peppers.
  • For a more flavorful dip, you can roast the coriander seeds before using them. To do this, heat a small skillet over medium heat and add the coriander seeds. Toast the seeds for 2-3 minutes, or until they are fragrant and start to pop.
  • Serve the dip with pita bread, crackers, or vegetables.

Conclusion:

Coriander dip is a delicious and versatile dip that can be used as a condiment for grilled meats, fish, or vegetables. It can also be used as a spread for sandwiches or wraps. The dip is easy to make and can be tailored to your own taste preferences. Whether you like it spicy, tangy, or mild, there is a coriander dip recipe out there for you.
