HOLIDAY WASSAIL WITH ALCOHOL

Holiday Wassail With Alcohol image

This is the most amazing tasting Wassail. It's perfect for a holiday party or a cold winter night. It's like drinking hot apple pie that warms your tummy and lifts your spirits. Although it's a big undertaking to cook, you won't be disappointed, especially when everyone is complimenting you on making something that tastes so delicious. Make sure you serve it warm. Because this takes a while to put together, I usually make it the night before and pour the mixture into bottles/containers so I can transport it easily. I guessed at the number of servings but its always been enough for the parties I've been to where there have been 25 or more people.

Time 2h

Yield 25-30 serving(s)

Number Of Ingredients 13

1 gallon unfiltered apple cider
2 cups peeled baked apples, golden delicious works good
1/3 cup water
1 cup sugar
1 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon mace
6 whole cloves
6 allspice berries
3 cinnamon sticks
2 cups cream sherry
1/2-1 cup brandy
3 eggs, separated into egg whites and yokes

Steps:

  • In one saucepan, heat: 1 gallon unfiltered apple cider and 2 cups baked (peeled apples) cut into medium small pieces
  • In another saucepan, boil for 5 minutes: water, sugar, nutmeg, ginger, mace, cloves, allspice berries and cinnamon sticks.
  • In another saucepan, boil: cream sherry and brandy.
  • In a small mixing bowl, mix until firm - stiff but not dry: 3 egg whites.
  • In a large mixing bowl - mix until creamy: 3 egg yokes - light in color.
  • Now fold egg whites into egg yokes and add spice mixture a little at a time, stirring constantly.
  • Next add booze
  • Next add cider mixture.
  • Serve warm. I've served it in a punch bowl and in a large pot on the stove. Right before serving, I usually take out the allspice berries and cloves so people don't choke on them. If I find out that the wassail has cooled down, I re-heat it.

HOLIDAY CLASSIC WASSAIL

Holiday Classic Wassail image

This wassail has been a holiday tradition in my house for many years. An added bonus - the house smells wonderful while it's simmering!

Provided by loof751

Categories     Punch Beverage

Time 20m

Yield 6-10 serving(s)

Number Of Ingredients 8

6 cinnamon sticks
16 whole cloves
1 teaspoon allspice
2 (6 ounce) cans frozen apple juice concentrate
2 cups cranberry juice
1/4 cup sugar
1 teaspoon bitters
1/4 cup rum

Steps:

  • Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
  • Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
  • In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
  • Remove from heat and add rum.
  • Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

CHRISTMAS WASSAIL

Christmas Wassail image

This is a recipe my mother made and passed down to me. I have passed it down to my daughters. It is a traditional holiday punch for Christmas parties. Enjoy! You stud the oranges with the whole cloves -- you can make decorative designs, if you want.

Provided by Chris Reynolds

Categories     Punch Beverage

Time 1h15m

Yield 1 1/2 gal

Number Of Ingredients 5

1 gallon cider
2 cinnamon sticks
6 oranges
whole cloves (for studding oranges)
3 cups brandy (more or less)

Steps:

  • Stud the oranges with the whole cloves and bake in a 300 degree oven for 30 minutes.
  • On top of the stove, heat the cider and cinnamon sticks until almost boiling.
  • Pour the hot cider into a large punch bowl. Add the studded oranges. Add the brandy to taste -- the more the merrier!
  • To replenish wassail, just add more heated cider and more brandy. The longer the oranges sit in the punch, the more orange flavor there is to it.

Time 25m

Yield 11 serving(s)

Number Of Ingredients 6

8 cups apple juice
2 cinnamon sticks (each 2" long)
1/2 teaspoon ground nutmeg
2 tablespoons lemon juice
3 cups pineapple juice
1/3 cup honey

Steps:

  • Combine all ingredients into a large saucepan.
  • Bring to boiling, then reduce the heat, cover, and let simmer 10 minutes.
  • Remove cinnamon sticks and serve hot in mugs.

Tips:

  • Use fresh ingredients for the best flavor. This includes using fresh oranges, lemons, and apples. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
  • Don't be afraid to adjust the spices to your liking. If you like a more tart wassail, add more orange juice or lemon juice. If you like a sweeter wassail, add more sugar or honey.
  • Serve wassail warm. You can reheat it over low heat on the stovetop or in the microwave. If you're serving wassail at a party, you can keep it warm in a slow cooker.
  • Garnish wassail with a cinnamon stick or a slice of orange. This will add a festive touch to your drink.
