CUCUMBER, WASABI AND FRESH GINGER SALSA
From www.kettlechips.co. Tone down the spiciness if you wish by reducing the amount of ginger and wasabi. This is spicy-I've warned you. For a chunkier consistency, omit the yogurt.

Steps:
- 1. Salsa: Using a food processor, puree 1/2 the fresh berries. Add whole berries and pureed berries into a mixing bowl.
- 2. Add the rest of the ingredients (except Salmon) and mix well.
- 3. Salmon: Brush fillets lightly with oil.
- 4. Position on broiling pan, and place 4 to 5 inches from heat.
- 5. Broil approximately 11 minutes per inch of thickness.
- 6. Serve with blueberry salsa.
Tips:
- Choose the freshest salmon possible. Wild-caught Copper River king salmon is the best choice, but if you can't find it, any fresh salmon will do.
- Cook the salmon to medium-rare. This will keep it moist and flavorful. To test for doneness, insert a paring knife into the thickest part of the fish. If the fish is cooked through, it will be opaque and will flake easily with a fork.
- Make the berry-ginger salsa ahead of time. This will allow the flavors to meld and develop. You can store the salsa in the refrigerator for up to 3 days.
- Serve the salmon with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or rice.
Conclusion:
This Copper River king salmon with berry-ginger salsa is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The salmon is cooked to perfection and the salsa is a delightful combination of sweet, sour, and spicy. This dish is sure to please everyone at your table.
